Brooke's Best Bombshell Brownies

Just made these. I halved the recipe, used 3 small to medium eggs, mixture of brown/white sugar, pecan pieces and dark chocolate cocoa. So amazingly good and moist.

Muffin Frittatas

Just made these this morning. Basically, used the recipe but omitted zucchini added JD sausage and red/yellow/orange peppers since I had those on hand. Mixed the egg mixture in a blender and added a spoon full of salsa. Instead of mixing all ingredients together, I spooned the vegetables into the muffin cups and topped with cheese then poured the egg mixture. After taking out of the oven, I ran a knife around the edges and this helped to remove them from the pan. Excellent, Excellent!!

Guinness® Corned Beef

Excellent. I made this in my crock pot. I used Harp instead of Guinness and cooked it on low for 7 hours. So moist and tender.

Portobello Sandwiches

Excellent! That's all I can say. If you're a big fan of these meaty mushrooms, this is a great way to eat them. I added swiss cheese and let it melt under a broiler.

Fried Cabbage II

I usually don't eat cabbage but will eat it from now on because of this recipe. Very delicious. I didn't add the vinegar and didn't think it needed it and it was true in my opinion.

Pesto

I made this the other day with fresh basil from the garden. I added 3 cloves of garlic and walnuts instead of pine nuts. Very good but very garlicy. Next time I will use just 2 cloves. This is very good on french baguette with sliced tomato and fresh mozzarella and cracked pepper with a drizzle of olive oil and balsamic vinegar. A meal in itself with a glass of wine. Salut!

Zucchini Cakes

I made these today with fresh zucchini from my garden. I used a different brand like Old Bay that I brought back from NC. I added onions and bell peppers and thought the texture was nice but like the other reviews said "Way to Salty". I will make these again but add my own seasonings.

Henry and Maudie's Oatmeal Cookies

I made these the other night and they came out very chewy, just the way my family likes them. I added cinammon to the batter and chocolate chips to half of the batter for my daughter and raisins in the other half for my son. I recommend this recipe for anybody who wants to add more complex carbos. to their diet. Very good!

Quick and Easy Clam Chowder

I just made this super simple chowder and took the advice of some of the other reviews. Added more potatoes and used the fat free version of soups and used 1 pint of fat free half and half and 1/2 pint regular whipping cream. It came out very creamy. I didn't let it cook all day either only until the potatoes were tender. Although I'm not a connoisseur of clam chowder, I thought this was really good.
