Fast and Easy Turkey Pot Pie

It is wonderful, then I played with it a little, adding some sauteed onion, subbed peas and carrots for the mixed veges, and added tiny cubed yukon gold potatoes. Then I added one small can of Cream of Jalapeno soup to a large family sized can of Cream of Chicken soup, and added double the turkey to make two pies. Wow, super fantastic, and very easy. Try this one, it is really a keeper.

Habanero Pepper Jelly

This recipe is wonderful and full of flavor and vibrant color. I had a can of roasted red bell peppers, so I tried subbing them for the raw in the recipe, the second time I made this jelly, and it was wonderful. I also tend to gently shake the jars as they cool so that the mixure combines as it sets, rather than let the solid parts float, I prefer the even distribution to the floating effect. I give these every year at Christmas along with a jar of Strawberry Preserves (also found on this website) and everyone loves it. This year I made it a little hotter than usual and got rave reviews from all my family, so I will not skimp on the habanero any more. Try it over cream cheese with crackers, a distinct crowd pleaser at parties, and very pretty when displayed on a platter nicely.

Real Homemade Tamales

For starters, this is a fabulous recipe, the best I have ever had. These are the changes I made: I slightly melted the lard in the microwave for easier mixing instead of fluffing it with the beater, it worked out very well. I also cooked a boston butte pork roast instead of loin, and I cooked it in the crock pot. I added a bit more salt, a tablespoon of cumin and chili powder to the meat mix after tasting it and it came out perfect. The masa was very moist and tasty, perfect salt to masa ratio on the recipe. Since I quadrupled the recipe, it took me all day to cook them, but I used the masa recipe to make some bean and jalapeno tamales, too. My two teenage boys couldn't get enough of them, gobbled them up as they were coming out of the pot. It was a very lost cost recipe compared to the amount of meals I got out of it, freezing recommended if holding longer than 4 days. I will try this with chicken next time, and even beef when the price of beef goes down a little. Try the masa recipe with a chunk of mozzarella cheese stick and a slice of pickled jalapeno instead of meat, very good! I cut the cheese stick down the middle to make it more narrow, and layed it in the middle of the masa, then put a strip of jalapeno next to it. Wow, these are very tasty and economical, too.

Strawberry Preserves I

I follow the cooking instructions to a T and this recipe is always a big hit. I use Apple Cider Vinegar, though, and it works great. Everyone wants a jar when I am done, so I always double it when the strawberries are in season and on sale. Super excellent on PB & J's, so my kids say. I prefer it on biscuits, myself.

Yummy Meatloaf

In the picture I saw ketchup, but it isn't in the recipe. I added ketchup instead of the steak sauce and again on top, very nice! I roasted some garlic dill potatoes in the oven at the same time with the meatloaf, and it was a big hit, in fact, there were no leftovers. With two hungry teenage boys, there are rarely leftovers, but this one went fast.
