I added a small jar of marinated artichoke hearts to this and skipped the olive oil since they are packed in oil. Very yummy.

Lime-Curry Tofu Stir-fry

I substituted mushrooms for the tofu and added one cup of cashews at the end. Also a 1/2 t of red pepper flakes for spice. Yum!

Sun-Dried Tomato Pesto

I made this vegetarian by omitting the Parmesan cheese, and it was delish. I will skip the balsamic vinegar next time, though, as I found it made this a bit too sweet for my taste.

Fresh Pesto Pasta Salad

Excellent! I recommend kalamata olives, artichoke hearts and pepperoncinis to garnish. Add a little cream to the pesto, too!
