Black Bean and Rice Enchiladas

I made this last night and they were excellent. I did a couple of thing different, I used homemade Cuban style black beans, used both green and yellow bells. I omitted the spices and rotel (cuban black beans has the same seasonings) added queso fresca with the cheddar. I had enough for a pan of flour and a pan of corn tortillas. I topped both with homemade enchilada sauce, more cheddar and queso fresca. Simply wonderful with a tangy slaw on top. I can tell with the recipe would be just as good as written, it is very versatile.

Waffles I

Really great recipe. Everyone in the family loves them and we keep some made in the fridge for the kids. I did change a few things: I use real butter instead of the oil, half whole wheat flour, add a scoop of whey protein, and only 3 tsp of baking powder.

Caramel Macchiato Ice Cream

This is wonderful. We made this all summer long last year. I think the best mix was half heavy cream and half & half. We made real caramel sauce and added heath bars to it too.

Tex-Mex Turkey Soup

I made this soup 2 times now. It is wonderful with pepper smoked turkey (greenberg) from the holidays. I made it once in my dutch oven and once in the crock pot (i did saute the onions, garlic and herbs before adding it to the crockpot). It was perfect both times. I made 2 changes: I used chicken stock instead of water/bullion and I didnt add sour cream to it, we added it individuality along with cheese and green onions. Thanks for a great recipe.

French Dip Sandwiches

I made this in my cast iron dutch oven on med heat for 3.5 hours. It turned out fantastic! I used the low sodium soy sauce.This is sensational and well worth making. Thanks!

Vegetarian Chickpea Sandwich Filling

I made this for a veggie friend of mine for lunch one day. It was good, but we both agreed it needed pickle relish. She was very pleased to have something to make when craving a sandwich.

Real Hummus

We love this and make it all the time. I use dried garbanzo beans soaked over night. Then I drain it, cover with fresh water and cook until tender and keep them in the fridge ready to go. Because there isnt any can water to use, my husband adds veggie/chicken broth and the olive oil in it. Good pinch of cumin is amazing in it. We have also added roasted red peppers to it. This is a great recipe.

Ham and Cheese Bowties

I made this and it was pretty good, but only one of the three kids liked it (which is the reason for 3 stars). I will make it again without making it early in the day and keeping it in the fridge until dinner (made it dry with extra noodles). I added peas to it and ritz cracker crumbs for the topping.

Baked Pancakes with Sausages

Chicken Enchiladas Supreme

Yum! It turned out well and everyone liked it. What I did differently: I didnt use the extra philly/milk (it would have been overkill), I used sharp cheddar and monterey jack (what I had on hand), and I used half of a left over smoked chicken. Will definitely make again.

Thai Cucumber Salad

WoW the whole family LOVED this. I love that I can sit down with the family to eat it with them unlike regular pancakes. I sliced up several different types of fruit to top it with. Thanks for the wonderful recipe, I have made this about 5 times now.

Slow Cooker Teriyaki Pork Tenderloin

This is wonderful. I cooked it my dutch oven on the stove on med for 3.5ish hours. 1 tsp of chili paste and doubled the rest of the sauce. Served over jasmine rice with green onion on top. Peas and carrots as side.

Banana Banana Bread

I made this with my 7year old. (This was her official first baking.) Very nice bread. The only thing we changed was we added a splash of vanilla and 1/4t nutmeg, 1/4t cinnamon, just a hint of spice was nice. (4 stars because it needs a touch of spice.) We hand stirred to keep it from over mixing and baked it on the lowest rack and came out prefect at 50mins. Great way to use up over ripe bananas. Thanks!

Best Brownies

These were wonderful. My husband said we will never need to by a mix again. The only thing I did was I added half a bag of ghirardelli semi-sweet choco chips to the batter. Other than that I followed the directions and I did not double. I did make the frosting, which was good too, but I think it was overkill (I had the icing separate) and the reason for 4 stars. Do not over mix and if yours were flat it might be old baking powder.

Donut Muffins

I made these yesterday morning for the kids. I was asked to keep these around. I made these exactly as the recipe stated and was very happy I had everything on hand! I doubled the batch and ended up with 12 regular sized muffins. The only thing I will change next time is I will use real butter instead of margarine. Thanks for a super easy recipe with simple ingredients that are staples in a pantry.
