Donut Muffins

These are just cute, like donut holes, and delicious! Definitely a 5 star-plus! Quick and easy too. I made 22 mini donut holes. I don't care for nutmeg so I used cinnamon instead. Then when they were done, I let them cool for 3 minutes and then loosened them a bit with a knife but left them in the pan. I melted the butter, put it in a small tiny bowl and just dipped the top of the donut hole in, then immediately dipped it into the sugar/cinnamon mix and sprinkled some of the sugar around the rest of the donut hole - it stuck to the sides/bottom even without butter! I let them sit on a wire rack while the kids got dressed for school, then put them in mini ziplock bags for their morning snack. They LOVED them and I loved having a couple with my coffee, too! This weekend I may make more and dip them into melted chocolate and sprinkles....or glaze some too! Perfect for a healthy donut craving substitute. :)

Baked Lemon Chicken

Easy and yummy - I tried it with olive oil instead of butter and it was great! I add twice as much garlic just because we love it! Also goes great with Peanut Noodles as a side!

Pizza Dough I

Stop looking for a dough recipe - this one is it! I've used it right after mixing and after letting it sit for 30 minutes - either way this crust is delicious. We are a thick crust family, you can adjust this to whatever thickness you want depending on your pan. Sometimes I use a round pan and push extra dough to the edges...then set string cheese pcs around the edge, pull dough over the cheese and press/tuck it into the flat part of the dough. Add sauce (Easy Pizza Sauce III) and toppings - the absolute best pizza out of your kitchen!!!!!

Easy Pizza Sauce III

Delicious - the only sauce I use for our pizza. I usually double the recipe and put away to toss with some pasta for a quick and easy lunch or side for dinner. With a sprinkle of cheese and pepper flakes - we love it.

BLT Dip

Tastes just like a BLT sandwich - especially if you serve them with little slices of bagel or those cute little mini bread loaf pieces! Easy to prepare, more flavor if you make a few hours ahead of time.

Bacon and Tomato Cups

No matter what combo of cheese, meat, vegi you use...these cups are absolutely delicious! Everyone who tried these at my Mom's Club get together LOVED them and asked for the recipe. I'll be taking them to bunco later this week and I'll be sure to take copies of the recipe with me :)

Apple Pie Muffins

I shredded the apples and made the apple a perfect consistency - very apple pie-ish :) They were a hit with everyone who tried them this weekend. This is going to be a regular request in our family - delicious with a good cup of coffee!

Mexican Style Meatballs

These meatballs were a hit with family this weekend! It was the second time I'd made them - the first time I added an extra chipotle pepper and it was a little too spicey for us. This time I stuck to the recipe and it still had a bit of a kick to it, but even my 4 y/o was able to enjoy it. I baked the meatballs while I made the sauce to get away from 'fried'. Then I put it into a crockpot with a can of tomato paste so that it wouldn't have that watery consistency that you can get with crockpot recipies - made a perfect sauce! Had leftovers with mashed potatoes last night - yummy. Originally served it with refried beans, homemade tortillas and some vegi's. Delicious meal!

Easy Granola Bars

Delicious - I won't be buying the boxed granola bars anymore. I made the recipe as is - I added some wheat germ just to sneak in more fiber. There were 2 pc. I hid for myself that I forgot about - I made this batch 9 days ago....and it's still moist and fresh. Crumble it over some vanilla yogurt and it was great. My next batch will be dried apricots/cranstrawberry/almonds/coconut - can't wait!

Breakfast Loaf

Easy and Delicious! You can't go wrong with this - makes a great breakfast/brunch item and if you leave out the scrambled eggs, you can dress it up to be a yummy lunch or dinner - just add what you like. I added salsa instead of tomatoes and the ladies loved it! Also used sourdough bread with is my favorite. The only thing I would caution is to not let it overcook, otherwise the bottom will get too hard to cut easily. You have to try this one!

Mocha Chocolate Chip Banana Muffins

Very moist and yummy muffin. I used 3/4 cup Splenda - 1/2 cup brown sugar to lower the sugar content for a friend. Still delicious. A bit too sweet for me either way.....so I might cut the sugar down next time and see what happens. The coffee adds a subtle change to your typical banana muffin - with added mini chips - it's just a scrumpcious snack/dessert muffin!

Honey Roasted Red Potatoes

Oatmeal Peanut Butter Cookies

These are delicious peanut butter cookies! I add 1/2 cup more pbutter and and extra cup of oatmeal. The oats give it a nice textured look, but doesn't dry it out at all. Also, 1 txp of vanilla - I add vanilla to every cookie I make! Now the only 2 recipes I use is this one and the Flourless Peanut Butter Cookies on this site. Two different types of cookies....just depends what Im in the mood for :)

Blueberry Crisp II

Delicious! I took my kids to the blueberry farm and wanted something 'quick' to put together for dessert - this was perfect. Quick and easy....yes I was curioius about the mayo - but it was so good - my 2 y/o said 'yummy in my tummy' - dad and sister said 'you're right about that'. I've been asked to make it again tonight - I have never made a cobbler twice in a week!

Brown Sugar Meatloaf

A very moist and delcious meatloaf - our favorite, I haven't tried another since finding this recipe! Only change I've ever made was to use crushed croutons instead of the crushed crackers - just simply yummy!

Snickerdoodle Mix in a Jar

I am not a Snickerdoodle cookie addict - I love to have chocolate in my cookies - but this is a delicous cookie! I made it with butter flavored shortening since I was low on butter and they came out perfect - a bit crisp on the outside - but chewy in the middle. I also added 1 tsp. vanilla - just something I do with every cookie recipe. One thing I do with my sugar cookies is add 1 tsp vanilla/1/2 tsp orange flavor and I bet that would work with this cookie also - just a a bit of a change. These are now being made as 'cookie in a bag' to give out during the holidays. Right now they're adorable with Fall/Halloween decorations on the bag with the recipe on the back of the bag. Thanks for a great cookie! Makes about 4 doz or so, plenty for our family...so on day three I can tell you that they were still nice, fresh and chewy. The last two will be gone after I make my coffee this a.m.!

Baked Potato Salad I

This is delicious - as long as you don't use American Cheese! I use cheddar or the Mexican Blend instead and it is yummy. I prefer green onions and the half mayo/half sour cream mix. This is always devoured and enjoyed by all - my bunco group asks for this to be made as part of the snacks served at my house! I've had to pass this recipe on to many, many people who've tried it. It was the first item to disappear when I made it as a side dish for a camping potluck - and while I always make plenty....there were a few who couldn't help but whine about there being none left for thirds...

Flourless Peanut Butter Cookies

If you want true, pure, melt in your mouth peanut butter goodness - this is it. Warning: Have plenty of milk on hand - it's the perfect match. Good with coffee or tea, too. Just try it - you won't miss the flour and you will thoroughly enjoy this cookie!

Flourless Chocolate Cake II

Simply delicious!!! No frosting neeeded to taste absolutely yummy - but if you want to add a glaze or a dusting of powdered sugar it's great that way too. I made this for a craft night at my house (no frosting) and it was a hit! The gals couldn't believe the flour was missing from it! Will be making this often at our house!
