Colleen's Slow Cooker Jambalaya

Almost followed recipe exactly except I omitted the shrimp and substituted 1 lb beef stew meat for the chicken.Drained about 60% of the liquid from the diced tomatoes and it is a perfect consistency. Prepare the rice separately. Make sure you don't go cheap on the sausage; go to the market and spend a little more, you will know the difference.

Broccoli Casserole

Healthier edits to this meal: cut down on the butter, use just enough to saute the onion to avoid burning it. Also added some fresh garlic to the onions to saute. Use half the amount of mayo (use light), maybe a tbsp of sour cream. I love mushrooms so I added a cup of that and less broccoli. Someone gave the idea of adding chicken to make it a full meal which was genius in my opinion. Use reduced sodium cream of mushroom soup and cut out the seasoned salt completely. Garlic salt should be enough to get you by.

Lemon Thyme Chicken

I like a stronger lemon taste, so I doubled the juice. The onions really soak up the lemon well; I suggest fresh lemons over pre-squeezed. Reducing the mixture down is key, and add more flour if you want the sauce to thicken faster.

Pear Bundt Cake

Nothing but great feedback on this recipe. Changes: used lemon cake mix, pinch of brown sugar and cinnamon. Exceedingly simple to make and the pears in light syrup makes it fluffy and yummy!
