Oatmeal Raisin Cookies IV

I read several reviews before making this recipe. I followed the reviewers recommendations. I used 4 large eggs, 1 tsp of baking powder and 1 tsp of baking soda. 1/2 tsp salt. 2 tsp cinnamon and 2 tsp nutmeg. i soaked the raisins in the egg mixture for 45 mins - next time i will leave it overnight as the raisins weren't plum enough for me. Plus i would increase the raisins - not enough for me. I omitted the nuts as I had just made another cookie a week ago that already had nuts in it. Depending on the texture i would add more quick oats to get right texture. After spooning the batter on the cookie sheet i put the tray in the fridge for 10 mins or so, which helped big time with the cookie keeping its form and not going flat as others said it did. The cookies were soft but really needed more raisin or the nuts. Makes a huge batch too.

Treasure Cookies

I had made this recipe several times over the past few years. In the past two weeks I had to make it three times because they didn't last at home and all my coworkers kept asking me to make more. The only change I made is the amount of chocolate chips I used. I only used 1.5 cups and once I scooped the dough onto the cooking sheet I placed the tray in the fridge for 5 mins so the cookies can retain a good shape and not go flat. Thank you for the recipe. This is a home favorite!!!!

Crystal's Chicken Saltimbocca

I believe this was the best banana bread I have made (I have made a lot). I followed the directions with two minor changes. I really like tasting bananas in my bread so I used 5 bananas instead of 3. I really believe that was the key to having such a moist bread. Instead of 1/3 cup of chocolate chips, I used 1/4. It made more than enough and my son has not stopped eating it since it came out of the oven. Thank you for the recipe.

Old-Fashioned Scalloped Corn

Made this in hopes of winning over the family. Thought it was a different twist to the reg corn casserole. It lasted for a few more days than I expected but was good. Especially when you put some honey over it (according to my son) :-) I would recommend this recipe.

Squash Stuffed Chicken Breasts

I ended up making it home a lot earlier than normal so I figured I give this recipe a try. I made just a few changes. I seasoned the veggies with garlic powder and lemon pepper (just a hint of each). I seasoned the chicken with smoked chipotle seasoning before stuffing it with the veggie mix. I coated the chicken and then browned it. I used olive oil. Before placing the chicken in the oven I added a small pc of baby swiss cheese on top of each chicken. Chicken was flavorful, moist and delicious. The only reason I did not give this 5 stars is because of the length of time it takes to make it. On a busy work/school night making this would have delayed dinner from being served.

Slow Cooker Chicken Stroganoff

Complete success!!!! I made a few changes. I seasoned the diced chicken with the italian dressing mix powder, but then i added 1/3 cup of marsala cooking wine, 1 can of fat free cream of chicken, 1 can of fate free mushroom. Mixed it all together and let it cook on a high for 2.5 hrs. Once the chicken is no longer pink and the soup is mixed/heated well I diced up a black of low fat cream cheese and added it to the chicken mixture in the pot. Mixed it really well when the chunks of cheese melted easily. Let is cook on low for 30 more mins and it was done. A huge hit my 5 yr old son, his babysitter and her friend. Hubby liked it too. Definitely will make this again.

Easy Meatloaf

I made a meatloaf several years ago but because it did not turn out good i never attempted to make another meatloaf till last week when I came across this recipe. I followed the advice of other reviewers. I sautéed the onions and double the sauce. Even though I only had 1 lb of beef to use the double sauce was not enough. Will have to make more sauce next time. This was DELICIOUS. Thank you for the recipe.

Spinach Stuffed Chicken Breasts

This is a recipe you can play with and modify to your liking. I like spices and flavor so I had to add a marination base to it. I stuffed the 3 peices of chicken breast with the feta/mayo/spinach mixture. Then i made a home made dressing (2 tblspn of olive oil, 1 tblspn lemon juice, 2 tspn oregano, 1 tspn lemon pepper, salt and pepper to taste) once i mixed all these ingredients i coated all sides of chicken in this mixture. Then wrapped the bacon around the chicken (2 slices per chicken) secured it with the tooth pick and baked it. The juices from the chicken and the oil/lemon base gave the chicken a zesty flavor and was not dry. I served with roasted potatoes and brocolli.

Beef Stroganoff with Noodles

WOW. This was the first time I made this dish and it turned out to be very good and a keeper. I made some adjustments due to the fact that I work till late and did not start cooking till 745pm. I used stew meat that i boiled for 15 minutes (as i was puting away the groceries)it also helped cut back on the cooking time. Then i browned the meat, set it aside. In the same pan i cooked the onion (did not have any celery) and added some garlic as well. once the onions were translucent i added the meat to it. Added 1/3 cup soy sauce, 1/4 cup masala red cooking wine, 1 can beef broth, and 1-1.5 tablespoon of lemon pepper. It gave it a good zing. Then I let the meat and the broth simmer for 20-25 minutes. in the mean time i boiled the pasta and sauted the mushrooms and had my dinner rolls baking. Once the pasta was done, i added the mushrooms to the meat sauce and added the cornstrach mix (2-3 tbspn cornstrach with a little bit of water). Once the sauce was think enough I added the LIGHT sour cream (put a little more than what the recipe called for. Let the sauce simmer for 10 minutes. Served rigt after with a pinch of black pepper on top. My boyfriend liked it very much and had two plates full. His exact comment was "baby this sauce is perfect" and i still have left overs. I liked it very much and will make it again. Thank you for the recipe.

Spinach Deviled Eggs

AWESOME RECIPE. I have never made deviled eggs before. my company was having a potluck as part of the halloween celebration and my dept was asked to bring side dishes. So I decided to try this recipe out. IT WAS A HIT! I made some changes to the recipe though. I left out the vinger and the sugar (as suggested by others). I also cut back on the butter. I added one tablespoon of mustard. I mixed the bacon bits in with the rest of the ingredients and sprinkled paprika onto to add more color. This is a keeper. Thanks

Mexicali Pork Chops

This was really good. I made a few changes though. The vegetable turned out great and instead of using diced tomatoes i used Pace Salas. Also i seasoned the pork chops with Mrs Dash seasoning and added a few drops of blasamic vingeratte. Let it marinate while i was cooking the vegatables. I served it with lipton's dirty rice. Thanks for a great recipe.

Mini Meatloaves

it was the first time i ever attempted making a meatloaf. since i did not have any meat i used ground turkey and a lot more bread crumbs than what the recipe calls for. it was okay...too bland for my taste bud. also the ketchup gravy was too sweet. it would have been good if you did not use the brown ugar. overall it was OKAY.

Best Barbequed Burgers

My husband has made these several times now...and everytime it has turned out to be really good. My husband is a simple kind a guy and does not like having to use to many ingredients to make a dish, therefore this was an awesome recipe for him to make. This is a family hit. Shepherd's Pie II

This was a good recipe to work off. I made several changes to the recipe. I browned the onions first, added the meat to the onions with garlic and ginger. Once the meat was almost cooked I added green peas, corn, bell peppers and mushrooms to the meat. After a few minutes I added the nutmeg, sage, salt, red chili powder and some basil and parsley for taste. Once the meat and peas/corn was cooked, I added about 4-6 tablespoon of pasta sauce to give it some texture.Make sure you do not put too much to the point that it is saucy...add just enough so the meat is not so dry. Then add the mashed potatoes and bake in the oven with some cheese on top. When I made this dish I had several people over for dinner and they all went back for seconds and thirds. I hope all these ideas help you!

Baked Pork Chops I

This was an excellent recipe and dish. I have made it several times and everytime I make it it turns out better than the last time. As other have said that the sauce is not enough so you might want to make more than the recipe alls for...also it is good left overs if the pork chops are not left in the sauce for too long in the overn. My husband enjoyed it very much and thinks that I on my way to becoming a good chef..hehe. This is a recipe you must try.

Beef Stew IV

WOW...this was really good. This is the first time I made a Beef Stew and I was very nervous about making it. I followed the recipe however instead of water i used 6 cups of beef broth instead and added some oregano and basil for the spices. I also used green onions. I boiled the potatoes before i added to the pot. This took off 30 minutes of the cook time. My husband could not stop raving about how good the stew tasted.

Alysia's Basic Meat Lasagna

This is was an awesome recipe. It was one of the best lasagnas I have had in a long time and it was fun to make. I had never used ricotta chesse before with the egg and milk, and i must admit that made the lasagna taste really good. I had only made lasagne one time before this for my husband 4 years ago and he asked me to never make it again. But after last time it seemed like he feel in love with my cooking all over again. So thank you for this wonderful reciepe.
