Debdoozie's Blue Ribbon Chili

This chili was delicious, and so easy to make! My kitchen smelled heavenly! I did make a few modifications. First of all, I halved the recipe (and still had a lot of leftovers...but not because it didn't taste good!) but I still used 1/2 an onion. When browning the beef and onion I also threw in a tablespoon of minced garlic. I used a roasted garlic flavor salsa, and to make it even spicier I used the entire package of chili seasoning mix. I only used one can of beans - I opted for the dark kidney beans. I also threw in a can of corn. The chili was definitely hot and spicy! We had it on top of rice. OH! I totally forgot to add some cheese. Next time! I'll definitely make this again!

Tofu Lasagna

Absolutely delicious! I did what others recommended and doubled the cheese and used a full jar of spaghetti sauce. I also added some onions. Next time I will add some more veggies and double the sauce as well. My husband had no clue that I used tofu and he LOVED it! This recipe is definitely a keeper!

Cheddar Beef Enchiladas

Everyone loved it! Added some mozzarella cheese and used black beans instead or refried beans in half of the enchiladas. Leftovers tasted great! Will definitely make again!

Spam on the Go

I make this all the time! One of my husband's favorites! I double the amount of noodles and sauce, use a Tbsp. of black pepper and use low-sodium Spam and low-sodium soy sauce. Reheats well!

Jamie's Cranberry Spinach Salad

Delicious! Didn't have white wine vinegar so used rice vinegar. Added gorgonzola cheese. Next time will cut back on the sugar. Not only was it good it was pretty as well!
