Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

We've made this twice now, and my chicken hating son has loved it both times. The second time I left out the jalapeno (we didn't have any) and it was still fantastic. I did add some water to the marinade the second time around, as it mixes into such a thick paste it was hard to mush it around and get all the chicken coated. I also added a tablespoon of the lime juice to help tenderize the chicken.

Honey Skirt Steak Appetizer with Horsey Sauce

This was really good. it will play well as an appetizer or finger food at a party. It went well as a main dish at dinner. Definitely make the horseradish sauce to go with it. While the sweetness from the honey was subtle, it was noticeable. For my 16 year old son, it was too sweet, for the highly sensitive to sweet me, I barely noticed it. Left overs were good with eggs the next morning.

Carrot Fennel Salad

We love this recipe, even the kids. My daughter doesn't like the bite of lemon juice, but using an orange instead makes her quite happy. My personal preference is for less carrot and more fennel. This recipe is easy to play with to adjust for your family's preferences. All in all, it is a FANTASTIC light side dish that is a great way to get fresh raw veggies into your diet.

Slow Cooker Nacho Chicken and Rice Wraps

A fantastic throw everything in the pot meal. We added shredded cheese, black olive, avocado and sour cream to each wrap. My son put his in a hard taco shell and loved it!

Spicy African Yam Soup

I served the salsa and peanut butter on the side since not everyone likes them. Son skipped both, but added cheese and bacon and ate 2 bowls claiming it a keeper. Spouse put peanut butter & Bacon, but no salsa and had 2 bowls. I added salsa, PB and bacon and, yep, had 2 bowls. I used Quinoa instead of rice, adding it the last 15 minutes of simmering and kidney beans instead of garbanzo because that's what I had. We'll definitely make this again.

Meatless Lasagna Verde

Balsamic Baked Tilapia

I used red onion, bell pepper and asparagus. I reduced the balsemic with the veggies while I broiled the fish, then added the veggies and cheese and broiled until the cheese was melted. Everyone LOVED this. I did use sharp cheddar for husband and kids because they don't like blue cheese. They still loved it. I had to use soy cheese for mine and it was still awesome, so this is very adaptable.

Chicken and Basil Calzones

Adding extra sauce to the calzone, not just what's in the meat, boosted the flavor and really brought out the basil. I added diced mushrooms and bell pepper, spouse and kids added olives. Works very well and allows for creative additions.

Quick and Easy Brownies

My son (11) made these on his own. Searched out the recipe & made the brownies while spouse and I were at a hockey game. Since they tasted great, and are easy enough for an 11 year old to make, 5 stars on the quick and easy!

Homemade Black Bean Veggie Burgers

These were really good, however we all agreed, if you make 4 patties they are too thick and over powering. This amount should make at least 6. Smaller patties the next day were far better. We'll probably alter the spice eliminating the cumin and replacing it with something else. My son said it tasted too much like chili. My husband thought the "earthy" flavor of cumin didn't match the concept of "burger". The patties stored well for later use, so this is a nice quick, easy patty to make and keep on hand for fast dinners or lunches.

Pumpkin Bread IV

This was really good. We made it in a large sheet, actually 2 9x13 pans, and frosted it with cream cheese frosting as a dessert. The recipe makes a ton, so be prepared to share! We added 1 cup Crazins soaked in spiced rum to the batter, I highly recommend it!
