Chicken and Wild Rice Casserole

This was very good! It is worth taking the time to simmer the in-bone breasts, although, they don't need a full hour, maybe 45 minutes. (The first time I made this I used boneless, skinless breasts and it is not nearly as good) After simmering the breasts for 45 minutes, you can break away pieces of the chicken off the bone, no need for a knife, its so tender. Also, I sauted fresh mushrooms in butter, garlic and salt, and used the seasoning packet from only one package of rice. I also used light sour cream - it tasted great without the extra fat. I supplumented my 6 oz box of rice with a brown/wild mix. Very Yummy! Also, I decreased the salt in step one.

Colleen's Slow Cooker Jambalaya

This was very good. My whole family enjoyed it. I added some asparagus (cut in one inch pieces)and omitted the shrimp. I also used turkey kielbasa and threw rice in slow cooker with the rest an hour before dinner. Lots of flavor for a healthy, low-cal, low cost meal.

Amazing Chicken

I used pepperidge farm herb seasoning mixed with some shredded Parmesean/Romano blend. I also cut up the chicken into tenders. Very easy and good.

Chicken Pot Pie III

It came out very good with a few changes. (I'm sure the original recipe is good but I can't help myself) I only added one can of cream of chicken & mushroom. I added a little of the broth from the chicken (maybe 1/4 - 1/2 cup. I boiled chicken in grill seasoning, salt and garlic. I added only 1/2 tsp of thyme but will add 1/4 tsp next time. For veggies, I used 2 sm red potatoes, 1/2 an onion, 2 carrots, 2 stalks of celery and about 1 cup frozen green beans cut into 1 inch pieces. I nuked all the veggies together in a bowl for about 4 minutes before adding to chicken mixture. I poached chicken by placing in cold water with seasonings and heating to a boil, and then turning off immediately and letting sit a few minutes to cool. My PICKY family all gave it a thumbs up! It only gets 4 stars because I think 1 tsp of thyme would be very overpowering.

Beer Butt Chicken

Very Good! Only problem - the beer will expand and start flowing out of the top of the beer when you add hot butter. I use this recipe but put most of the butter in the can without melting first.

Basic Ham and Bean Soup

Tortilla and Bean Soup

I changed this recipe quite a bit to suit what I had on hand. Used pinto and kidney beans, halved the recipe, used ranch dressing instead of the packet, used salsa instead of the canned tomatoes and peppers and skipped the hominy. Also, I pureed about half the soup before adding the shedded chicken. It turned out excellent! Served it with grated cheese and tortilla chips. Made a meal.
