Cranberry Scones

I made a couple of adjustments to the recipe. I only used one-half cup of 1/2 and 1/2 which was plently of liquid. I did still need to add a bit more flour when I kneaded the dough. I dusted the top of the scones with bakers' sugar before baking. I brought them for a "food day" at work. They were very well received.

Best Cherry Pie

I used approximately 22 oz. of frozen unsweetened Door County cherries for this pie. I happened to have heavy cream so I used that to glaze the crust and then sprinkled it with sugar. I would recommend turning down the oven temperature to 350 after 10 minutes so that the crust does not get too brown. Its a great pie and we all enjoyed it!

Pumpkin Maple Pie Supreme

Its a good pie, but too sweet. I should have read more of the reviews and cut down on the brown sugar. I'm also not sure that using the maple syrup which is very expensive is really worth it. I eliminated the cloves and allspice since I don't like either one. The pie has a nice texture and flavor, but I don't consider it the ultimate pumpkin pie.

Smoky Cod and Parsnip Chowder

This is a delicous soup, but I had to do some adapting. I couldn't find any smoked cod so I used some smoked trout as well as 1# of fresh trout. I also had to use dried thyme. I used 1# of potatoes. They were organic fingerlings so I didn't peel them. I didn't bother to precook the fish and just used chicken broth to cook the vegetables. Then I added the fish and cream and simmered until the cream was hot and the fish was cooked. Definitley use the fresh chives if you have them available.

Apple Cranberry Salad Toss

We loved this salad. I made 1/2 the recipe since there are only 2 of us. I also added some feta cheese which is a great addition if you have it available. I'd like to make a plug for using Annie's Naturals Lite Raspberry Vinaigrette dressing. Delicious flavor and low fat.

French Toast Casserole

I added a peeled chopped apple to the bread and some chopped pecans to the cinnamon sugar topping. They were both good additions. The casserole makes a tasty breakfast dish.

Sangria! Sangria!

This is a great sangria recipe. I made it for a family dinner last night to serve with paella and we all loved it. We didn't have club soda so I substituted a bottle of Fresca. Worked fne.

Delicata Delish

This is a very good way to make squash a complete dish. I used 2 squash because there's lots of filling. My squash took longer to bake. I used 2 little red onions because that's what I got from my CSA farm. I cooked the quinoa in broth and added 1/2 package of Boca breakfast links. They were a great addition and gave the dish more flavor. My husband and I both really enjoyed it and I'd make it again.

Plum Pie

I made this pie for a potluck tonight. There wasn't a single crumb left! The other reviewers are correct there is enough crust for 2 pies. I liked the crust; it reminded me of cookie dough. I used a deep dish pie pan so I needed more fruit than 5 cups. I ran out of plums so I used 2 peaches. Its a great combination. I just added a bit more sugar to compensate for the additional fruit. I made the streusel topping just as listed and thought it was delicious. Be sure to use a pie shield on the crust so that it doesn't get too brown while baking.

Lamb Tagine

This is a really delicious stew. I brought it to a dinner along wtih the couscous and cumcumber salad and everyone enjoyed it. I found another very similar recipe and made a couple of additions just before serving. 1/4 cup cilantro, 1/4 cup flat-leaf parsley and 3/4 cup Kalamata olives, pitted and halved.

Oven Roasted Potatoes

There is no need to peel the potatoes if they're organic, just scrub and proceed with recipe. The potatoes were cooked perfectly in 20 minutes. I didn't need to adjust the recipe at all and my husband loved them!

Potato Arugula Salad

This is an easy and delicious salad. We got both potatoes and arugula in our box from our CSA (Community Supported Agriculture) farm. Its a great way to use them together.
