We had this tonight with eggplant from our garden. It was wonderful!!! Followed the recipe to a Tee. Next time I'll make a marinara sauce for dipping. I like that I can make ahead and freeze as I have more eggplant ripening all the time now. The taste was similar to fried green tomatoes.

Grilled Marinated Shrimp

Served this to a group of 14 and everyone loved it. The only thing I changed was that I used catsup instead of tomato paste and crushed red pepper flakes instead of the hot sauce. I also marinated scallops and they turned out great. I'll use this marinade again and again! Thx!

Seafood Enchiladas

Sorry...I made this recipe using most of the other reviewers suggestions and was really disappointed. The only thing I changed was instead of flour tortillas, I used whole wheat. My family found it to be pretty bland even with all the good seasonings. The prep time was WAAAAy off! Didn't think this was worth the cost or the effort.

Easy Mushroom Rice

Served this with the Crab Stuffed Chicken Breast and it was a hit. My husband doesn't like mushrooms and really liked this. I used Portabellos and followed the recipe to a T. Will make again...loved that you could just stir together and stick it in the oven!

Crab Stuffed Chicken Breasts

We loved this! I wanted fresh crab meat and found 2-3oz prepared crab cakes that worked perfectly! Used Wondra instead of flour (never fails). Rather than putting the crab mixture at one end of the pounded chicken breast, I spread it all over and then rolled. Served with "Easy Mushroom Rice" also on this site. Will make again.

Chicken Chimichangas with Green Sauce

I've made this recipe twice now and it was a hit both times! The kids wondered how this Scots/Irish grandmother could pull it off!! All 3 of my kids have worked in Mexican restaurants and thought it was great. Served with rice mixed with Rotel's and re-fried beans. Thx for sharing!
