Burrito Pie

My family devoured this! While I am not a fan of changing recipes around, then giving a review on the "original", I only did one thing different. When I was looking at the bazillion taco sauces/salsas, etc, out there, my eye was drawn to Paul Newman's Salsa with Black Beans and Corn. "Why not?" I thought to myself...So I tried that instead of the taco sauce, and it was terrific! Thank you for sharing this, it will be a regular for us!

Orange Soy Pork Loin

Made this for my family with ingredients I had available. I braised it in the oven, covered for about an hour and a half to 2 hours at 350F. Served over beautiful brown rice and there was not a piece left! Thanks so much for what is now a family favorite, but also something lovely enough for guests!

Steamed Mussels with Fennel, Tomatoes, Ouzo, and Cream

Made this last night, as I had the fennel in my fridge, and needed to build a meal around it! Crazy, huh? Well, I am sooo happy I tried this recipe, instead of my regular way of making mussels. The only thing I did different, was to use Sambuca instead of Ouzo, as that was what I had on hand. Every one loved this! My hubby was very skeptical, but wound up going back 3 times! :D I can't wait to make this for guests! Thank you so much for sharing what will be a huge fave in my home!

My hubby loved the cabbage/bacon mixture so much, he was disappointed I added it to the potatoes! I had to put the pan in the oven to stop him from eating the mix before I could get the stuff to the table! Seeing the beautiful Irish butter melting in the middle made me forget my diet completely!

Tomatillo Salsa Verde

I could just eat it with a spoon! While I did cook the tomatillos in the said amount of water, I drained a little off before I used my immersion blender to mix it. I did add some vinegar, about 2 TBS, and I added jc of 1 lime at the end, because I love that acidity. Man, with some warmed-up tortilla chips, just stay away from me and my bowl! Thank you for sharing!

Husband's Grandmother's Shrimp Gumbo

Red Bean and Rice Party Dip

I felt obliged to splurge on "Fat Tuesday", and made this for my family. OH BOY did they/we dig in! It was super easy to make, and if you have leftovers, a cinch to reheat as well. I used the Tostitos Scoops, and we just had a great time! Will definitely be bringing this to parties in the future....

Easy Ice Cream Sandwiches

My son requested ice cream sandwiches instead of a cake for his Birthday. Ok, that was a go! I just subbed Choc Chip ice cream, as that is the overwhelming family fave. As long as you let these sit in the freezer for a good couple of hours( I have nooooo patience!) they are to die for! Thank you for a new favorite!

Jasmine's Brussels Sprouts

Yay you, Jasmine! Out of 6 kids, I only have 1 that will eat Brussels Sprouts. :( My hubby and I love them, and I was determined to figure out a way to get the little "darlings" to at least try a leaf! Well, this one did it! The one thing I did different was to slice the sprouts into a few pieces instead of just half after only blanching them. For some reason, my kids were less taken aback by them, and cleaned the bowl out! Thanks for sharing, and this will now put those little green fellows into a regular rotation!

Chinese Pork Chops

Grilled Garlic Artichokes

I am rating this for me, and my artichoke-loving daughters. My hubby loves them too, but is too closed-minded about how I prepare them, and won't accept any other way than my pan-braising, so we'll forget him in this. My boys are too lazy to eat them, so they're not included either! So....these were fabulous! We really loved the way the grill added that extra "umph" to the artichokes after they were boiled. I did put a tied-up spice packet in the water with them that had a bay leaf, peppercorns, and thyme. After the basting, we didn't even bother to dip! Thank you for sharing!

Jeff's Hot Dog Chili

Oh Jeff, thank you for sharing! Of course, I thought I would have some left over from this batch to maybe use the next day, or to freeze for next weekend, but NO!!!! My one son kept going past the pan, taking a taste every single time! I just didn't bother measuring the chili powder, since my family is a bunch of "hotheads", but I will tell you, I'll be making this many, many times in the future!

Beef 'n' Eggplant Pie

This was a huge hit in my home! We grow several varieties of eggplant from seed, and wound up needing to find recipes to cook them other than "Parmesan"! Well, my family, even my 6 kids, down to the little one, told me "Yummy"! Thank you for sharing, Audrey! I am asked to make it often!

Best Spanish Rice

Seriously easy, and I followed the recipe exactly. I liked the idea the one reviewer gave about putting it in a casserole, topping with cheese, and baking till the cheese melts. Yum! Since I shall be making this rice all the time with enchiladas, tacos, and such, I think I'll try that idea! Thanks for sharing, and we loved it!

Karyn's Cream of Crab Soup

We just slurped this up like no tomorrow! I did follow some of the other reviewers' advice, and I subbed fat-free 1/2 & 1/2 for the regular. It was obviously a bit thinner in consistency, but had outstanding flavor nevertheless! Maybe if I lose my Holiday weight, I'll treat myself to the full-fat version, then go out for a REALLY long walk! I'll definitely be making this again, though, you can count on that! Thanks for sharing!

Marinated Ranch Broiled Chicken

Oh boy did this fly off the platter! I have 6 kids, and I basically had to quadruple the amount of chicken, but I used 3 packets of Ranch Dressing mix. It made enough to coat all 8 halves after I just added a tiny bit more of the liquid ingredients, and a splash of buttermilk I had from making mashed potatoes the previous night. Served it with rice, and braised Swiss Chard, and there was nothing left! Thanks so much for sharing, and giving me a new fave for my household! :)

Grilled Five Spice Chicken

Oh, Chef John! I made this, just hoping to find something a little "different" for a change instead of the typical BBQ. I even started making my own sauce because I got so bored of the jarred ones! This, however, was wonderful! All 6 of my kids, and my hubby gobbled it right away! I had to put 2 pieces aside for my 1 son to have for when he got home from work, for fear there would be none! :) Thank you for sharing this great recipe- I shall use it often! BTW, I didn't change a thing!

Sauteed Swiss Chard with Parmesan Cheese

Love this sooo much! I grow tons of Neon Swiss Chard in my garden. My mom looked at me like I was crazy, but I made it for her this way, and she was hooked! I also use either really good Balsamic, or red wine vinegar in place of the lemon juice, and it tastes lovely as well! You just need to back off on the amount a little bit(unless you're me, and like it bitey!) Thank you so much for sharing!

Super Summer Grilled Bluefish

Well, Thank you soooo much for posting a recipe for Bluefish that I can say is worth making! I've been married to a deep-sea loving fisherman for 25+ years, and now he's got our 6 kids involved. I have 35 lbs of Bluefish in my freezer right now, and I'm beyond thrilled that this recipe turned out so yummy! I Even tried the leftover recipe that another reviewer left and made sandwiches a la "tuna salad" style with mayo the next day! This was great too! Wow! 2 hits in a row! You saved the day for me, and I thank you from the bottom of my Jersey heart! :)
