Easy Vegan Peanut Butter Fudge

I was shocked at how quick and easy this recipe was! I reduced the sugar to 2 1/2 cups, and could have gone with 2 or 2 1/4. At 2, it was still very creamy. At 2 1/2, it was very thick and probably didn't need to be refridgerated to thicken. In any case, it was so easy and SO GOOD! We LOVE it! I recommend it to all peanut butter fudge lovers. (You can serve it to friends and family who are not vegan and they would NEVER guess that this fudge IS.)

Pumpkin Chocolate Dessert Cake

My 5 year old daughter and I made cupcakes from this recipe last night. I accidently left them on the baking rack last night and they are PERFECT this morning. Not dry at all. I did NOT use the pumpkin pie spice and they do NOT taste like pumpkin at all. Just chocolate cupcakes. Thank so much. We love these! (I also substituted a tiny (5oz) can of evaporated milk for the heavy cream. I used a 4oz kids sized applesauce pack and 1/2c butter because it's what I had.)

Super Moist Pumpkin Bread

This tastes GREAT! I cut the recipe in half and made 12 cupcake sized muffins. They turned out perfect. I also substituted applesauce for 3/4 of the oil, and omitted the shredded coconut. Thanks so much for this wonderful recipe. I highly recommend it.

French Apple Bread Pudding

I am so surprised how much I liked this. I have never made bread pudding, and the apples gave it a nice touch. (I left out the raisins, as I was not in the mood for them.) I did make a sauce for it out of brown sugar, butter, and milk (and a little condensed milk that I had left over due to scaling the recipe to fit the amount of bread I had onhand.) In any case, this is a great recipe. Thanks!

Cottage Cheese Roast

This meatless loaf was amazing. I would never have guess that cottage cheese and cornflakes could make THIS! I loved it. I used 2 1/2 cups of cornflakes, 1/8 cup of oil, 1/2 cup of walnuts, and added 1 cup of diced onions, green peppers, & mushrooms. Thanks so much for this recipe. It's wonderful. Hardens after sitting a bit. Can't wait to eat leftovers cold on a sandwich.

Vanilla Pudding

This recipe came out pretty good. I added a bit of cocoa, as the vanilla was just a bit bland for me, but the consistency was right on. I think I might try it with bananas or use brown sugar for 1/2 of the recipe net time.

Teriyaki Tofu with Pineapple

Walnut Brownie Pie

I was out of sugar and was craving brownies and had some condensed milk that I wanted to use up. I did not have walnuts or a pie shell, so I halved the recipe, left out the walnuts, and used muffin tins. It made nice round brownies, which I topped with a bit of white icing. Very enjoyable! Nice way to use up what i had onhand.

Best Lemonade Ever

This was a GREAT way to blend the ingredients. But the mix was not right for me. I scaled it to 10 servings (4 cups of water), but it was still too sour and too sweet. I added an extra cup of water and it was better, but still very sweet. I will try adjusting the ingredients. But I do love how there's no gritty sugar at the bottom...and it tastes the same at the top of the cup and the bottom of the cup.

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

This tasted just like sticky rice I east with mango or custard at my favorite thai restaurant. After cooking the rice, I followed the directions and soaked it in the sauce. It was amazing! I did not make the topping. It was not needed. (I also used REAL sticky rice and steamed it on a splatter guard over a pan with an inverted metal bowl over it. Perfect. I also split the sauce into 3 servings and refrigerated it and cooked 1/2 cup of rice 3 nights in a row. Mmm.

Sarah's Applesauce

I really loved this! I never would have thought of making my own applesauce. I substituted apple pie spice for the cinnamon and used twice as much. I also added a touch of brown sugar towards the end. (Almost as an afterthought.) This was wonderful!

Downeast Maine Pumpkin Bread

This is a tried and true recipe for me. It comes out great every time. The only thing I do differently is hold off on the ginger and double the rest of the spices. (Sometimes I even add a tsp of applepiespice.) I like spice in my pumpkin bread. I like to make one pan of muffins/cupcakes and one loaf. Cupcakes take less time. AWESOME every time!!!!!!!!!!!!!!

Sugar Cookie Frosting

This frosting was great on the Easy Sugar Cookie recipe. My little one had fun frosting the cookies! (I used butter instead of shortening, as our family doesn't eat partially hydrogenated oil.)

Original Nestle® Toll House® Chocolate Chip Cookies

These cookies were a big hit. I used Ghiardelli milk chocolate chips, as that's what I had onhand. I forgot to add nuts and they were still awesome! I made one cookie sheet full, then froze the rest of the dough in balls. It was SO easy to pop a few cookies in the toaster oven later.
