Hasty Chocolate Pudding

I have made this time and time again and it comes out perfect every time. My entire family loves it! (I don't see how the person could have kept cooking it for 30 minutes without it thickening. I wonder if she left out the cornstarch. When I stir after the 2nd one minute interval,5 minutes total, it starts to thicken and look shiny. I usually stop there, especially if I am refrigerating for a while.)

Baked Honey Mustard Chicken

Fluffy Pancakes

This has become my go to recipe for pancakes. My family absolutely loves them. They like them best when I substitute buttermilk for the soured milk and butter. (I leave out the milk, vinegar, and butter and I use buttermilk in its place. ) I do cook mine in butter, though. I like them best when I let the batter sit a bit before using. Ends up fluffiest that way for us. Really great basic recipe. I make these 2 or 3 times a week. (Makes 8 very small pancakes. Serves between 2 and 4 in my family depending on who is eating. )

Apple Pie Muffins

I had an abundance of ripe pears from a neighbor's tree and needed something to do with them, so I decided to try this recipe. I didn't think about the juiciness of the pears (that had been cut up in the fridge the previous day) compared to apples that were just cut, so the first time I made it, it was extra moist and had pretty flat tops. (Although my daughter LOVED it that way.) The second time, I added an extra 1/4 cup of flour and a teaspoon of baking powder and they came out PERFECT! My family loves this recipe. It is a keeper. Thanks!

White Chocolate, Chocolate Cookies

This recipe is perfect. The ONLY change I made (other than chips) was following the advice of other reviewers to use 1 tsp baking powder and 1 tsp baking soda. Oh my gosh! These are perfect. The first time I made them, I did not use chips at all. The second time, I used chocolate chips. When you take them out, they look a little under done, but after they sit for 5 minutes, they really are perfect. I put them in tupperware overnight and they kept very well for the 2 days they lasted. LOVE these! Thank you!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Everyone in my family LOVED these cupcakes. I used chocolate cake mix and toll house cookie dough. SO yummy that we didn't even use icing. Will definitely make these again!

Apple Crisp II

This is my new go to recipe for apple crisp. We all LOVED it. I used whatever apples I happened to have around my house. Because it was not granny smith, I cut down on the white sugar. I followed reviewer advice and tossed the apples with the spice-sugar mixture. Also reduced water to 1/4 cup. Personally, I love oats, so I reduced the flour and added extra oats to the crumble. I can see why this recipe is so well loved. Best apple crisp to ever come out of my kitchen!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

This tasted just like sticky rice I east with mango or custard at my favorite thai restaurant. After cooking the rice, I followed the directions and soaked it in the sauce. It was amazing! I did not make the topping. It was not needed. (I also used REAL sticky rice and steamed it on a splatter guard over a pan with an inverted metal bowl over it. Perfect. I also split the sauce into 3 servings and refrigerated it and cooked 1/2 cup of rice 3 nights in a row. Mmm.

Homemade Vanilla Pudding

Made this using the exact measurements, but used brown sugar for a more caramel pudding. Also followed another reviewers suggestion of mixing the dry ingredients in the cold pot, adding cold milk and mixing well, then heating. No lumps. Well loved by my daughter, my mom, and me. :)

Pesto

2 huge bunches of basil and a bunch of garlic were in my CSA share this week, so I used them to make this delicious pesto. (I didn't have nuts, so I left them out.) This was my first time making pesto and it ROCKED! Thank you!

Downeast Maine Pumpkin Bread

This is a tried and true recipe for me. It comes out great every time. The only thing I do differently is hold off on the ginger and double the rest of the spices. (Sometimes I even add a tsp of applepiespice.) I like spice in my pumpkin bread. I like to make one pan of muffins/cupcakes and one loaf. Cupcakes take less time. AWESOME every time!!!!!!!!!!!!!!

Sugar Cookie Frosting

Easy Sugar Cookies

These cookies came out AWESOME! And were EASY! After I mixed the ingredients & it was crumbly, my daughter and I washed our hands GOOD and played with the dough. It came out great. Nice and soft. She patted some down and used cookie cutters to make a few. I made logs out of the rest. We wrapped both (logs & cut outs) in waxed paper & set in the freezer for awhile. (We played a board game.) Then I sliced a log and put them with the cut outs on a baking sheet and baked them. They came out PERFECT! Her shapes stayed shapes and tasted great!

French Apple Bread Pudding

I am so surprised how much I liked this. I have never made bread pudding, and the apples gave it a nice touch. (I left out the raisins, as I was not in the mood for them.) I did make a sauce for it out of brown sugar, butter, and milk (and a little condensed milk that I had left over due to scaling the recipe to fit the amount of bread I had onhand.) In any case, this is a great recipe. Thanks!

Best Carrot Cake Ever

These made very good muffins. The only thing I changed was halving the recipe, using whole wheat flour for 1/3 of the flour, and adding coconut. I will leave out the raisins next time. Half of the recipe made a dozen cupcake sized muffins. I can't say it was the best I ever had, but it was VERY good. (I'm still searching for a recipe that comes close to the best I ever had.)

Creamy Chocolate Frosting

This frosting was AWESOME! It's just like the light chocolate frosting my mom made for me when I was a kid. I chose what kind of cake I wanted and it was always yellow cake with frosting that she made that taked EXACTLY like this. Not dark, but nice and light. THANKS! This is a keeper! My new recipe!

Walnut Brownie Pie

I was out of sugar and was craving brownies and had some condensed milk that I wanted to use up. I did not have walnuts or a pie shell, so I halved the recipe, left out the walnuts, and used muffin tins. It made nice round brownies, which I topped with a bit of white icing. Very enjoyable! Nice way to use up what i had onhand.

Vanilla Pudding

This recipe came out pretty good. I added a bit of cocoa, as the vanilla was just a bit bland for me, but the consistency was right on. I think I might try it with bananas or use brown sugar for 1/2 of the recipe net time.
