Fish Tacos

This dish is easy and delicious! Used flour tortillas (what we had on hand) and added some fresh avocados, pico de gallo, and topped it off with fresh cilantro from the garden. Made the batter with Marzen beer from Gordon Biersch, which made for a great, flaky, golden batter. Delightful summer dish!

Cajun Spiced Pork Chops

Loved this spicy recipe! Perfect "cajun" flavor! I added chili powder and chopped onions to my rub for extra flavor. Paired this with red beans and rice in dirty sauce and mashed potatoes. *Quite spicy, so if you don't like spicy food, use a bit less of the cayenne pepper. :)

Cheesy Tuna Melts

yummy and quick! Light and great for lunch or a light dinner. Left out the celery because we aren't fans in my house, but added red onion and lettuce. Loved how easy this was to make and how delicious it turned out!

Cheddar Broccoli Chicken and Mashed Potatoes

quick and easy AND DELICIOUS! That's my kinda meal! Made this for dinner for the bf and I. Used instant (gasp) mashed potatoes and added chopped onion and shredded cheddar cheese plus salt and pepper. Since I used fresh broccoli, I cooked the whole mix for 5 extra minutes. Excellent dish.

Taco Pie

Loved this super easy and quick dinner! I added corn (off the cob), diced tomatoes, pinto and black beans, fresh red onion (chopped) and didn't include the sour cream in the layering, preferring to let each person add it as a topping if they so desired. This was a big hit at the dinner table! Add lettuce, salsa, hot sauce, guacamole, or whatever traditional taco toppings you like! DELISH!!

Bacon-Colby Lasagna

Made this on a whim one night for the bf and I. Halved the recipe (as it says it's for 24 people) and only used one pan. The real work in this recipe is the prep! Once that's done, it's all downhill! Usually, my bf hates lasagna (the Ricotta cheese) so this was a fun, easy, and delicious alternative! Even our roommate (who hates tomatoes and onions) LOVED this recipe! And, because it makes a whole pan- we have lots of leftovers! yum!!
