Sue's Hot Fudge Sauce

Wow. Just wow. I was looking for a decadent bitter chocolate fudge sauce, and with a few tweaks, this was it. Super easy recipe- I read the reviews and followed tips. Here's what I did: I used 1 stick (1/2 cup) butter plus 2 TBS butter, 2 cups sugar, and 1/2 cup cocoa. Oh, and I added a couple pinches of salt. After it came to a boil (and you do need to use a large saucepan) I used my immersion blender and blended constantly, letting it go about 9 minutes. Finally, I pulled off small portions and added a bit of peppermint extract to one (about 1/8 tsp to 1/2 cup sauce) and instant coffee granules to another (maybe 1/2 tsp to 1/2 cup of sauce). We served it hot over vanilla ice cream and it was AMAZING. My husband, who doesn't really like sweets, couldn't stop licking the spoon. Makes a lot, too, so this is a great recipe to use for gifts. Best Tuna Casserole

Very good - the kids liked it, and it was super easy and fast. I used shells since I didn't have egg noodles, and buttered saltines since I didn't have potato chips. I didn't have peas or mushrooms - which was fine since my kids don't like either. I used a 9x13, cooked at 350 for 15-20 minutes. Very flexible recipe. It's a keeper!

Easy Baklava

Delicious! I don't think I'd call it easy - but baklava isn't an easy dish to prepare, which is why it's so special. I used almonds, which I chopped and toasted. I added a touch of allspice with my cinnamon, and just a bit of sugar, to mix into the nuts. The lemon zest in the syrup really adds a great flavor. Yum!

Baked Chicken Nuggets

Very tasty, and pretty quick and easy. Instead of melted butter before the bread crumb/cheese dip, I rolled the chicken in mayonaise/honey mustard.

Lemon Icebox Pie III

Wow! Yum. The reviews were true - this was easy and delicious. We had it for Easter dessert, and I expected it to be the 'adult' choice, with cupcakes for the kids. At least some of the kids actually preferred the pie (and the cupcakes had sprinkles!) I used half regular cream cheese and half neufchatel (lower fat) and found the taste to be wonderful. A very refreshing, not too-sweet, not too-tart dessert for anytime. Easy, quick, delicious - what's not to love?!

Cheesy Ham and Hash Brown Casserole

This was tasty. My husband said it really stuck to his ribs.I think next time I'll use less sour cream, as I found the called for amount a bit much for my taste. I used diced ham plus a little crumbled bacon (4 slices) - but I think next time I'll use browned crumbled sausage for a better taste (again, just personal taste). I'll also add some sauteed peppers and onions. I'm also trying to think about how to make this a less costly recipe: it's not very budget friendly right now. The soups are expensive (there wasn't a store brand available), and the other ingredients are also all pretty costly. In all, yummy and I'm glad to have the recipe!

Downeast Maine Pumpkin Bread

Wow - truly delicious. I made this for the first time this morning, and made a very few modifications to try and make it a bit more healthy. I used just over 2 cups of white sugar (I couldn't bring myself to use a full 3 cups) and it was just fine. I added a few tablespoons of flaxmeal (always do in baked goods to sneak in some health benefits) and used about 1/2 to 3/4 cup whole wheat flour. I added toasted chopped walnuts and raisins to part of the recipe. In total I ended up with 1 5x9 loaf, 1 3x5 loaf, and 12 mini muffins. My kids nearly wiped out all the muffins immediately - opting for them over the cookies (no joke!). I had my loaves get a bit browner than I like before the toothpick came out clean - even with foil on top - so watch them carefully. This is an AMAZING recipe - and will be made over and over again in my kitchen I'm sure.

Old Fashioned Onion Rings

Wow. These are amazing. I'm a huge onion ring fan, and now when I get a hankering I will just make these. Yes, they are a lot of work, messy and time consuming - but worth it. I keep trying to refine the process (I've made them twice now) and have tried the ziploc bag and container w/ lid method - both are messy. Anyway, delicious - especially with the bloomin' onion dipping sauce from this site. I used panko which are delicious - I've also used seasoned Italian breadcrumbs. The panko are expensive, but delicious. Thanks for the recipe!!!

Baked Pork Chops I

This was really good. surprisingly good! I didn't have any white wine, so I used vermouth. And I have to agree with other reviewers who said the wine/vermouth is key to the flavor. I would definitely not leave it out. I doubled the sauce as other reviews suggested, and found that was too much. This is our new pork chop recipe. Definitely worth the time. Thanks! update 7/3/11- I made this tonight, but sauteed onions and mushrooms in the pork oil before adding soup, milk, and chardonnay. Very good. I didn't combine the sauce and the pork in the oven since I had kids who didn't want the sauce - and I think it's better combined. Just be sure not to overcook the pork. Delicious with buttered egg noodles.

London Broil II

MMMMM! Amazing marinade. I followed the recommendations of others and added lemon juice, fish sauce, and garlic, and the taste was great. The meat was still on the tough side - despite piercing it all over, and marinating all day. I think London Broil is just a tough cut. I'll try this on other meats and chicken. Yum

Best Breakfast Cookie

really yummy. I used apple sauce instead of prune puree and 1 cup of splenda brown sugar blend. I used raisins and craisins and left out the nuts. I used half whole wheat pastry flour and added ground flaxseed. great recipe - and fun to have for playing around with.

Apple Strudel Muffins

These were good - but only fine, not great or amazing as some other reviewers said. I read the reviews first, and made the adjustment of grating some of my apple first. I also added cinnamon and nutmeg for flavor.But mine were pretty dry - and a sticky mess on the pan afterwards from the topping. So in the end for the amount of time and effort, I didn't think they were that great. I'm so surious about why there are different opinions - it makes me wonder if the apple choice makes a big difference. I used Cameo since that was what I had. I also would maybe add yogurt or applesauce to get a moister muffin if I were to make these again.

Yia Yia's Tzatziki Sauce

Very good. I'm happy to have a recipe for tzatziki sauce. This was my first time making it, and it was easy. I used nonfat plain yogurt, lowfat sour cream - and I neglected to drain them first since I forgot to read the reviews first. It wasn't too runny though, so it wasn't a big deal. I did add a bit of grated onion, and I'm not sure I'd do that again. I halved it, and it still made a ton. I used it for falafel and pitas - and will definitely make it again.

Frosted Pumpkin Doughnuts

This was my first attempt at homemade donuts. These were quite tastey, but they were hard to knead/roll without adding lots of extra flour. To me they didn't taste pumpkin-y at all. And we just rolled them in cinnamon sugar rather than doing an icing. I might try to add more pumpkin, but I can't imagine using more flour that the 4 1/2 cups already called for to keep the dough from being more gooey.

Honey Nut Granola

Wow! I have made this granola 4 times since I found the recipe a few weeks ago. As soon as the family eats it up, I make more. I've changed it a bit each time, after reading all the reviews, and I think I've finally settled on my favorite: I use oats, sliced almonds and sunflower seeds (but no other nuts), whole flax seed, wheat germ (about 1/2 cup each)for added nutrition, plus coconut for sweetness. I up the oil and honey just a bit, plus add a bit of real maple syrup for flavor. I add a combo of regular and golden raisins, but only at the very end (otherwise they burn-yuck!). I bake it on parchment, on a lower temp (about 225) and stir often, every 7-10 minutes. I pulled it off to another pan to cool - trust me, this is a must! And then finally, since we like ours clumpy, as it was cooling, I pulled off bits and squeezed hunks together. I then mixed about half the still warm granola with about 1/3 cup powdered milk. It gave amazing flavor and texture to the finished product. This recipe is PHENOMENALLY good - and versatile and cheap. Wow, what's not to love?

Kettle Corn

I am SOOOO addicted to this stuff! I've had a couple messy flubs along the way (you really need to know which pan pops corn the best, know your stove so you've got the right setting, and be sure you shake the pan as other reviewers have said). I like mine a bit salty, so I add a bit with the sugar and corn. Thank you so much for this recipe!!!!!

Skillet Tamale Pie

This was very good. My first bite seemed a bit lacking, but as the sour cream and salsa mixed in with rest, it was delicious. I used ground turkey, which can be a little bland, so next time I might pump up the spices a bit more. I also forgot to add garlic, which is a must have for me, so that should help next time too. My skillet isn't oven proof, so I did use a casserole dish. I also used two eggs for the topping as I didn't want to take the time to separate it, and it tasted just fine. Next time I'll definitely double the recipe and put one in the freezer.
