Holiday Ambrosia Salad

Huge hit. I did use the crushed pineapple and omitted the coconut because no one except me likes it. I used to have this growing up, but did not have the recipe, so I had been making a different fruit salad for holidays. Not any more if my son has anything to say about it. He has been talking about if since Christmas. He came home from the store with his dad and brought home the ingredients to make it yesterday. It is as good as I remember.

Southern Candied Sweet Potatoes

Fantastic. I didn't add the spices except for the salt. Usually I just wing it when making these, but not any more. This was perfect.

Mom's Pumpkin Pie

This recipe was enough for 3 frozen pie shells. Luckily I had an extra pack in the freezer. I used McCormick's pumpkin pie spice and used the recommended amount on the container and it was very mild in flavor. Think I will try the individual spices next time.

Shoyu Chicken

My family has some very picky eaters and everyone liked this dish. That is pretty amazing in my book. I followed the flavors exactly but I used boneless, skinless chicken breast cut up into large chunks and cooked it on the stove top. I also boiled the marinade and cooked it down, thickening it with some corn starch and serving it over rice. I am adding this to my regular rotation, because I ABSOLUTELY LOVED THE FLAVOR OF THIS DISH.

Sweet and Sour Meatballs IV

I was looking forward to this but it just didn't hit my family's taste buds. Not sure why, followed the recipe, just doubled the sauce as there was not enough in this recipe.

Mini Cheesecakes

SO EASY. I did not used the papers and I put a whole cookie in the bottom of the pan for each one (they fit perfectly). Next time I would double the cream cheese mixture as there wasn't quite enough in each one. Delicious

Jalapeno Snacks

This was the best recipe I have tried on this site for jalapeno poppers not fried. I basically followed the recipe with just a few changes. 1. I have a jalapeno rack so I left them whole & cored them out, leaving a few seeds for heat. 2. I used mozzarella cheese instead of cheddar because I didn't have any. 3. To make the mixture thin enough to pipe into the jalapenos, I thinned the mixture out with a couple TBSP of milk. 4. I put the mixture in a plastic baggy and cut the tip off to pipe it into the jalapenos. 5. Then I topped each one with approximately a 1/4 piece of bacon folded up and placed on top. 6. Cooked according to directions.

Macaroni Pie

Everyone at my Thanksgiving dinner LOVED this mac & cheese. I did cut pasta down to 16oz. and I heard on the food channel to liberally salt your pasta water for flavor which is what I always do now & it makes a big difference. I added about 1-2 TBS sea salt to about 2 gallons of water, and then I added only pepper to my mac & cheese. Delicious!!!

Swanson® Ultimate Mashed Potatoes

Everyone loved this dish. This is going to be my new holiday dish. The only thing I did different was I only had 1 can of broth- so I used it along with enough water to cover my potatoes. I left them whole & when I mashed them, I kept the skin on. Then I mixed in 4 oz of sharp cheddar cheese into the potatoes & then sprinkled a little on top. Delicious.

Caribbean Crabmeat Salad

I think this is one of those recipies were you are either going to love it or hate. Unfortunatelly no one in my family liked this salad at all. Maybe because we are used to a mayo based crab salad that we didn't care for this , because we love the citrus & fruit seperately. We really tried to eat it, but had to throw it away.

Best Big, Fat, Chewy Chocolate Chip Cookie

My whole family hated these cookies. They actually ended up in the trash can, which never happens with my bunch. It could in part be my fault, I don't know. The dough was way to thin using melted butter, so I added some extra flour and a pinch extra baking soda. We just did not care for the taste at all. Sorry

Chantal's New York Cheesecake

Very easy to make. I chose to use a pan of boiling water on the rack below the cheesecake instead of the water bath. Didn't want to take a chance of water seeping in. Mine did crack, but leaving it in the oven for 5 hours and refridgerate till the next day, it settled and couldn't see a trace of the cracks. This was very creamy & delicious.

Fabulous Fruit Salad

My family really enjoyed this fruit salad. Especially my son & me who love fruit I was a little leary about using the lemon yogurt. It gave it a wonderful, tasty, creamy sauce. My son informed me, we have to serve this for every holiday meal!
