Banana Oat Muffins

I was looking for a healthier recipe to use up some ripe bananas and decided to go for one with oats. I modified some of the ingredients based on reviewer comments (substituted Splenda brown sugar for half of the sugar called for; used applesauce instead of veg. oil; halved the salt). I also made some additions, stirring in some chia seeds with the flour mix for omega-3 and folding in chopped dates at the end. I ended up with 17 muffins. Great as an afternoon snack, evening sweet or quick breakfast.

Balsamic Roasted Pork Loin

This was my first-ever pork loin roast and it was delicious. There wasn't any vinegary flavor at all. It was very moist. I added crushed peppercorns as well. Easy and tasty!

Turkey in a Smoker

My husband and I used this recipe for our first-ever attempt at a turkey, for Christmas dinner. It turned out very moist, and my husband said he thought it was better than any turkey his mom had ever made! My parents raised their eyebrows when I poured in the cola, but it turned out perfect. However, we added a lot of sage, like a sausage-seasoning rub. We also cooked it over indirect heat (about 300-350 degrees), covered loosely with foil, on our gas grill, and it took about 4 hours. Wonderful!

A Hearty Green Bean and Sausage Casserole

I tried this for Christmas dinner as a twist on the original. My meat-loving dad thought it was great, but I think most of us preferred the meatless original. I added pimentos to give it some Christmas color. We all liked the onions layered inside as well as on top. It's a great change of pace, especially for sausage and meat lovers.

Becky's Oatmeal Carmelitas

These were sinfully rich and delicious. My husband's co-workers raved about them, and I sent them as Christmas gifts with the recipe attached. The only thing I would change to the instructions is that I had to reheat the caramel after it was "set aside" because it was too thick to drizzle, so maybe this step could be done while the crust is baking? Otherwise - amazing!!

Chicken Suiza Cornbread Bake

I modified the recipe based on a combination of other reviews and my family loved it. I substituted the mushrooms with a can of Rotel, I used 2 eggs instead of the egg substitute and I used 1 1/2 cups cream of chicken soup instead of the sour cream and it was great! I'll definitely cook it again sometime.
