Remarkable Fudge

It seems to have turned out fine, but I, too, had trouble getting it up to temp in the double boiler. After nearly an hour, I ended up putting it all in the microwave in an 8 c. measuring bowl, and microwaving it a minute at a time until the temp came up. Ahh...a friend just told me a double boiler is designed to keep the ingredients in the top pan at or below the boiling temp of water (212F), so there's no way to get something up to 236F in a double boiler.

Cranberry Pistachio Biscotti

Best biscotti recipe I have tried. I had to adjust proportions of berries, nuts and extracts a bit, based on what I had, but they were still great. I did add quite a lot of time to the 2nd baking - I like a crisp biscotti. I may bake another batch tomorrow!

Apple Pie by Grandma Ople

This turned out well, and my family liked it. I, personally, found the butter flavor in the sauce a little too strong. I prefer to taste the apples without the caramel. I will probably make it again sometimes, though, based on my family's reviews. I did pour about 2/3 of the sauce over the apples themselves, then the poured the rest over the top of the crust. I used a top crust with cutouts, rather than making a lattice top.

Brooke's Best Bombshell Brownies

Nice crust on top, chewy in the middle. Best "from scratch" brownies I have made. I substituted 1/2 cup vegetable oil for half the butter and cut out 1/3 or 1/2 a cup of sugar.
