Chicken Marsala

Super good but I had to modify the recipe slightly. After browning the chicken I took it out of the pan and kept it warm in the oven. Then I sauteed the mushrooms and added 3/4 cup Marsala, 1/4 cup Sherry and 1/4 chicken broth. The sauce is so good you need to at least double it. I then put the chicken back in and thicken the sauce a bit with some cornstarch and water. Very delicious!!

Sun-Dried Tomato Dip

This is delicious! Much better than a store bought dip. I doubled the amount of sun-dried tomatoes and used garlic powder. Real garlic can be too strong when it is not cooked. Added salt and pepper to taste and omitted the hot sauce. Hard to stop eating! Thanks for sharing!!

Holiday Chicken Salad

Amber's Sesame Chicken

Fabulous!! I agree that you will need to at least triple the honey and teriyaki. I also added 1 tsp of minced ginger. I found that the sesame seeds didn't really stick to the chicken so I might just added them at the end. Also, I would add the honey and teriyaki to the pan first to mix together before adding the chicken. Really tasty!

Chicken Enchiladas II

This was very good, however, I felt the ingredient amounts were way off. The only things I didn't double were the can of soup and tortilla wraps. 1 1/2 cups of chicken for 6 wraps was definitely not enough. Also, next time I think I would add some red peppers with the onion and use fresh garlic. Maybe a bit of cumin too. Everyone loved it!

Rotisserie Chicken

Very good! Much better than the grocery store kind. I don't think it needs that much salt, though. I used only 1 tsp. I also coated the chicken with Mrs. Dash prior to putting it on the BBQ. It was delicious! Be sure to use a drip tray.

Rice A Roni™ Salad

This is the absolute best salad! Everytime I make it, I am asked for the recipe. Water chestnuts are a must and I also add red, orange and/or yellow peppers for color. A great salad to bring to a summer BBQ!!

Tuscan Cream Cheese Spread

I started out looking for a recipe for tortillas roll-ups using sun dried tomatoes and artichoke hearts. I came across this recipe and thought it might work. Turned out GREAT! I modified somewhat...first I halved the recipes, used 3/4 cup cream cheese, 1/4 cup sour cream, 1/2 tsp garlic salt (instead of garlic and salt), 1/4 cup Parmesan cheese and a splash of lemon juice. I then spread the mixture on a tortilla wrap, rolled it, wrapped it in plastic wrap, refrigerate overnight and cut into 1 inches pieces the next day. They were delicious!!

Ziti with Italian Sausage

Very good and very easy to make. I browned the sausage with the celery, minced garlic and onion, drained it on some paper towels, then added it to the sauce along with fresh mushrooms. No need to dirty another pan. I also used double the amount of canned tomatoes and tomatoe sauce. Extra cheese needed as well. This works with penne or fusilli pasta as well. Kids loved it!

*****Excellent! My kids ask me to make this all the time. The sauce is delicious however I just used whole milk instead of whipping cream. Preparing this is a bit time consuming but certainly worth it!*****

Stir-Fried Chicken With Pineapple and Peppers

***A GREAT stir fry recipe! I did not have mirin (sweetened Asian wine) so I just used some white wine I had in the fridge. It was fine but I imagine the mirin would add a nice flavor to the sauce. I will look for it in the store for next time. I used a few other vegetables also, like carrots, celery and mushrooms...We like lots of veggies. My children loved this meal as well. Thanks Jean!***

Awesome Honey Pecan Pork Chops

Wow that was sweet! I did add chicken broth and soy sauce like was suggested but I guess not enough. I didn't have the problem of the sauce hardening but I used liquid honey. Maybe that makes a difference. I used turkey cutlets instead of pork. My husband loved it.

Flavorful Beef Stir-Fry

Great stir fry recipe! I followed some of the other suggestions and added 1 clove of garlic, some fresh ginger and black pepper. I didn't double the sauce and had plenty even though I didn't have exactly a pound of steak. I did, however, use lots of veggies though. I used red peppers, mushrooms, and celery as well. Might add some water next time, as the sauce was a bit strong.

Pork Tenderloin with Tomato and Pepper Sauce

My husband found this recipe and made it himself for supper. Super easy and super delicious!! The only thing we would change is increase the amount of garlic. He also just add the peppers and onions in with the tomatoes instead of cooking them separately. Our children loved it as well. Leftovers would be great in tortillas wraps, if there were any!

Artichoke and Roasted Red Pepper Dip

This is a nice change to the Artichoke Dip that I make so often. I didn't have a leek and used 1 can of regular artichoke hearts instead of the marinated ones. I found that 3 Tbsp of mayo(reg. Hellmann's is the best!) was not nearly enough and used about 3/4 of a cup. I also added grated Monterey Jack cheese as was mentioned in a few other reviews. I like to serve it with taco chips. It was delicious and devoured quickly by our guests.

Spinach Roll-Ups

Very good! I had a lot of inquires as to how to make this appetizer. After reading the reviews, I too made a few modifications. I used cream cheese and sour cream and a package of Knorr's vegetable soup mix instead of the ranch mix. I also added waterchestnuts and omitted the onion. I only used one package of spinach and found that was plenty.

Round Steak Sauerbraten

This was very good! I did a few things differently though. I added one medium size onion to the beef when browning it as I didn't have onion powder. I added a bit extra W. sauce. I used 1/4 c. red wine and a 1 tsp. of white vinegar instead of red wine vinegar. The brown sugar and the red wine gave it a really nice flavor. I also added 1 cup of mushrooms near the end of cooking. Thanks for the great recipe!
