Bill's Blue Cheese Dressing

I followed other reviews and flip flopped the measurements for sour cream and mayo, and used the Treasure Cave blue cheese (memories of my grandmother!), and combined in my food processor until smoother. This is excellent!! My husband and daughter can't stop raving. Hubby even mentioned he had quit eating blue cheese in restaurants many years ago as it was always too strong; that's not the case with this dressing. Add a little Parmesan to make it reminiscent of the Coco's House Dressing -- yum!! Thanks for sharing!!

Authentic French Meringues

Ohmigosh....I just made these and while I worried that I didn't beat them enough or too much, they turned out AWESOME! Andes sells their mints in a "chip" form and I bought both the (original) creme de menthe and what appears to be new - peppermint. I tinted them greean and red accordingly and not only are they delicious they are gorgeous! I found these mints at a WalMart SuperCenter...only place I have ever seen them!! YUMMMM!!!!! Can't wait to add them to cookie trays!!

Chocolate Cherry Biscotti

I made these last year for Christmas and had requests for more!! They were a huge hit!! I was hoping to make them this month to take to a friend visiting from out-of-state, but can't find the candied cherries (they were delicious) so will try to find the dried cherries or use maraschino as others mentioned. Make sure to make plenty!! Update: 12/15/06 These were excellent with a combination of marachino & dried cherries -- maybe even more flavorful!!

Quick Lemon Poppy Seed Bread

This turned out wonderful!! A little more cakey rather than breadlike, but delicious. I had 4 mini loaves and 1 9X5 from this recipe. I also topped with a powdered sugar/lemon juice glaze. Now I won't have to buy from the coffee shop to go with my a.m. java!! Thanks!

Chile Verde II

I cooked this 6 or so hours on high in the crock pot...added everything at once once after browning the meat, I cooked the onions and added the broth to get the browned bits from the pan then put in crock pot...I made some changes....I wanted 1/2 recipe....used 3 cans chicken broth and halved everything else....had to add a total of 5 pounds of pork as it was still rather soupy and I wanted something for burritos... This recipe turned out awesome...what a wonderful dish...and great for us midwesterners who are starved for authentic Mexican food!! Yum!!!

Ultimate Breakfast Casserole

Made this for Christmas morning breakfast. Very quick to put together. My changes: used the "fresh" hash browns in the refrigerator section, doubled the eggs, halved the sour cream, and added 2 c. crushed corn flakes to the butter for topping. Big hit!! Thanks!!
