Scalloped Corn and Broccoli

I have made this about 8 times now so thought I should review. I follow the recipe substituting whatever vegetables I have on hand in lieu of broccoli (green beans work well). I add a tsp of dry mustard and a dash of cayenne. Great side dish for turkey dinners. Note: This comes out on the firm but creamy side. It is not runny.

Gourmet Pretzel Rods

Excellent! I made these Salted Caramel Chocolate Pretzels with a couple of changes to look and taste. Instead of water I used milk or you can also use condensed milk instead of water in the caramels. The other change was to the method in that I drizzled the chocolate over on an angle so you could see the caramel underneath. I sprinkled a pinch of kosher salt to finish them off. The salt really punches up the flavour.

Sugar Cookie Icing

this is a great icing that is close to royal icing in finish but is soft and has a better flavour. I added butter flavouring as well as vanilla. for the best consistency to put in a piping bag I added approximately 1 more cup of icing sugar and a bit more water so it was thick but still flowed. you will have to play with it a bit until you get the desired finish.

Jim's Salmon Patties

overall good recipe. The mixture holds together nicely. I found that 4 oz of panko bread crumbs was too much, not dry but not tender like I had hoped. Add a little salt and some minced onion. Served this with a mild chipotle mayo with a dash of lemon juice added. Delicious! my 2 yr old loved it so this is our version of fish sticks now.

Thai Steamed Mussels

I often order thai mussels in restaurants. This is a wonderful well matched recipe to those I love when dining out. My only addition is a dash of cayenne which doesn't make it hot just adds a bit of snap against the creamy coconut milk. Super yummy!

Oma's Rhubarb Cake

This is a coffee cake so it is intended to be dense and moist. The recipe is perfect as is. I used frozen rhubarb and drained it well before adding to the batter. Its great warm from the oven and just as good cold. Hubby had 2 pieces. I might try using brown sugar for the topping instead of white granulated. It is a great cake that can be used with frozen apple or fresh peaches.

Butternut Squash Soup II

Made this last night and it was great with a few modifications. This recipe provides an excellent base. The added ingredients sent this over the top to great! I added couple of dashes of nutmeg, cayenne, garlic powder, curry powder (you could add more or less depending on taste). Then I added 1 TBSP spiced rum and a 1/4 cup of apple juice. I cooked everything in a stock pot, simmered like the method indicates and then pureed it all with a hand blender. Delicious and definitely makes more than 4 servings, granted I did use a large butternut squash
