Maryland Crab Soup

This is a real deal for good crab soup and that is coming from someone in Baltimore who has made crab soup from scratch! I did crush and cook the tomatoes, Old Bay and onions separately for 15 mins before adding the vegetables and then the crab meat. Cooking for another 15. Next time, think I'll add a bay leaf and 1-2 tablespoons of Worcestershire Sauce to add some more depth to the broth. If you want to "bump up" the crab taste you can throw the uncooked crab claws into the soup to cook as opposed to cooking them separately. That's how cooks do it in Maryland when cooking crab soup from scratch.

Maryland Crab Cakes I

What type of mustard (Dijon or regular) and the amount of Old Bay is up to the cook. However, for true Maryland crab cakes don't add more ingredients than what this recipe calls for (some do substitute crushed saltines for the bread). No onion, no peppers, no celery, etc. You can call them crab cakes, but not true Maryland crab cakes.

Maryland Crab Cakes Baltimore Style

These are Maryland crab cakes! Use of mustard (Dijon or regular) and amount of Old Bay (milder or spicier) is up to the eater! Some recipes substitute 1/2 crushed saltines for the bread. And, of course, you can broil them. But please...Never, ever add green peppers, onions or celery to a crab cake recipe and call them Maryland crab cakes! To us, it's all about the crab!
