Broiled Parmesan-Lemon Tilapia

Tried this last night and it was a hit! Hubby said to add it to the dinner rotation! I had Tajin (that I usually season fajita meat with) on hand, and I was glad to find a tilapia recipe using it.

Alice Chicken

This was really yummy! I used chicken tenders, and drained a jar of mushrooms since that's what I had on hand. I also had Muenster & PepperJack cheese and skipped the dressing altogether. Hubby loved it & asked that I add it to our dinner rotation. I served it with sauted greens.

Sesame Shrimp Stir-Fry

I used peanut oil to cook with & drizzled the sesame oil over the dish after cooking. I also used more ginger (I grate root from frozen), pre-toasted the sesame seeds, and used Cajun seasoning in place of cayenne . This was yummy!

Not Red Spaghetti Sauce

We liked this! I got the sausage on a great sale & searched here to find this recipe. I didn't have zucchini, so I used broccoli. Nice change of pace & a good entree to use that sausage in!

Easy Garlic Broiled Chicken

This was quick, easy & good! I used boneless, skinless, thighs. The variables I used are: 1 Tbsp roasted garlic + 3 Tbsp regular. I baked instead of broiling. Next time, I will use soy/Worcestershire, or soy/balsamic. I may also use chicken breasts. This made the rotation list.

Smothered Bacon Chicken

This is yummy! My variations were: 1-pounded the chicken breasts till thinner & tender, drizzled with olive oil & lightly salt & pepper; covered in fridge 2 hours. 2- used pre-cooked bacon, 3- used a 6oz plain Greek yogurt in place of sour cream 4- used cream of mushroom garlic soup. 5- added a thin layer of the soup mixture to pan before adding chicken to prevent sticking. Hubby requested this recipe to be part of our dinner rotation!

Salsa Cube Steaks

*UPDATED* Upped from 4 to 5 stars. My tweaks include using pork cubed steaks as have been recently showing up in supermarkets at a very low price; I found that pounded pork chops also do well in this recipe. I first season the meat by lightly drizzling olive oil, then adding salt, pepper & cumin; cover in plastic & place in fridge for an hour up to all day. I have used onions & peppers, and often times, skipped them when out, and found that the salsa has all the veggies needed. I also top the cooked meat with shredded cheese, cover & let that melt before serving. I have yet to have the pork be tough like the beef can be sometimes. Surely pounded chicken breast or tenders could also work. 1st review: Nice option for something different to do with cube steaks. Mine were tough but that was nothing to do with the recipe. My family did really like the taste!

Amazing Chicken

*Updated* This went from good to GREAT by using Chipotle Mayo in place of plain! Wow! Orig review: This was quite good! The chicken was crispy on the outside & moist and tender inside. I added minced roasted garlic to the mayo, and I used panko breadcrumbs which I seasoned with a tbsp each of paprika, Italian seasoning blend, onion powder, poultry seasoning, garlic powder & cracked pepper.

Chicken Breasts with Balsamic Vinegar and Garlic

This recipe made such an easy & wonderful gourmet meal!!! I served it over Dreamfield's low-carb penne pasta, which I tossed with herb butter, and added a colorful side of steamed spring veggies. Hubby loved it & asked that I add this dish to the rotation/request list! Definitely a direct match to a high-end restaurant meal.

Northwest Steakhouse Steak Marinade

Wonderful! A keeper! Like someone else stated, the butter hardens on cold meat. Rachael Ray says let meat 'rest' 20 minutes before cooking it to allow the muscle structure to relax to lessen toughness; so that may help, I'll try that next time. We just melted the extra butter marinade as Hubby turned the steaks on the grill. They did cause flare up, but no burning, so don't get too worried. Taste is just like the high-end steak houses, cause they use BUTTER!!! Yummy!

Chicken Stir-Fry

As many others have done & noted here, I made mods & this base recipe turned out GREAT; very PeiWei like! I used grated ginger (keeps in freezer in zipbag). I used pounded the breasts in a zip bag before cutting it into strips, used minced garlic, added lemon pepper seasoning to the chicken, added snow peas & mushrooms to the veggies, sub'd ckn stock for water & made more sauce by increasing liquids, and sprinkled sesame seeds over the dish just before serving. WONDERFUL!!!

Skillet Chops with Mushroom Gravy

I had 2 pre-seasoned frozen thick-cut pork steaks. I used Italian bread crumbs. Discovered after starting this recipe that we had no onions left, so I added a packet of onion & mushroom soup mix; sifted As a result, my breading was 1/2 c Ital bread crumbs, 2 Tbs parm/regiannno, 1 packet of soup mix with the the dehydrated mushrooms sifted out Added 1 can of sliced mushrooms to the gravy mixture,along with the dehydrated mushrooms from the soup mix. Like other posters mentioned, the crust lost its crisp in the gravy, so next time I'll keep the chops out of it, perhaps pouring some over the rice or potatoes and maybe a bit on the chops or on the side. Very Tasty! Hubby already asked for it to be a repeat in our rotation.

Brat 'N' Tot Bake

VERY yummy!! Hubby & I both thought this was a winner! I too used 1/2 the sour cream. I had hash browns on hand instead of tots. We have added this to our meal planning rotation!
