Quick and Almost-Professional Buttercream Icing
This frosting does not hold its shape. Also, I'll never use unsalted butter again in a frosting recipe again. You taste the powder sugar, not the vanilla..

Coconut Poke Cake
Very, very sweet - which can be could good or bad depending on your taste. Too sweet for my taste. Tip - make a TON of pokes. I made an average amount of holes and ended up with a cake that had some parts moist cake and some part just cake. I didn't like the just cake part. I'm assuming this is trying to be a coconut tres leche cake, so I think the whole cake should be moist, not random bites of regular cake and random parts of moist cake. Also, used Betty Crocker white cake, tasted too artificial to me. Might try this cake with a home-made cake instead. I did use real whip cream, don't like Cool Whip. Also, the Cream of Coconut is in the liquor aisle.

Banana Cake VI
The cake was very good. I halved the recipe and it was very good. I did have to add an extra 10 minutes of baking time. I would have given it 5 stars, but the frosting is just the basic cream cheese frosting.
