Bacon and Potato Soup

This soup is very flavorful. Sauted the carrots, celery and onions in the bacon grease, giving extra flavour. I simmered the soup with the lid off, thickening the broth. It was not as thick as if I had used cream or milk but was not water runny. I wasn't looking for thick as in creamy. I doubled the recipe, will triple next time. Crumbled the bacon and put on top of soup along with chopped green onions, also added a dolop of sour cream. This recipe is a keeper, will make often specially in the winter time. Thanks for posting. Kalua Pig in a Slow Cooker

This is the first time I have ever had Kalua Pig. I bought a 7.31lb. Pork Roast. I had to order the Hawaiian Sea Salt from online. I ordered the Red Sea Salt. I used the ingredients as posted, cooked it on low for 14 hours. The meat was tender, juicey and falling off the bone. My husband said it was fabulous but a tad salty. Cooking with a slow cooker always intensifies the flavors. I am not suppose to have salt, it was a little salty for me, but still great. It isn't something that I eat everyday, so I will deal with it. I will make this again many times.

Slow Cooker Cassoulet

This recipe is awesome. Cooked in 6 1/2 quart Oval Slow Cooker for 6 hours on low, chicken was very tender and came off the bone very easily. Removed the Chicken from the Slow Cooker shredded and put back in Slow Cooker, stirred everything made sure it was all mixed together properly. The Cannelini Beans maintained their texture, also had added some Baby Portobella Mushrooms, which also maintained their texture, nothing became mushy or dried out. I used chicken legs and thighs, as that is the only part of the chicken I buy. I can't stand chicken breasts, even with the skin and bone they are tasteless, as far as I am concerned. The extra ingredients I used, 2 lbs.,Polish Kielbasa, 3 cans Cannelini Beans, 8oz.,of Mushrooms. Followed recipe except the Wine, would have used the Wine, except my husband had to go to work, wasn't a good idea to put the Wine in at this time. The next time I make this, which will be again soon, will make sure he doesn't have to work that evening and use Wine along with Chicken Broth. This recipe needs more than 1/3 cup of a liquid or it will be very dry. Served this with a Spring Green Salad and Toasted Italian Bread. YUM O. Thanks for sharing a great recipe. Monte Cristo Salad

Haven't tried this recipe as yet, but sounds interesting, specially the Honey Dijon. Will let you know how it really is once I make it. Should be refreshing in this hot weather in Arizona, specially in the desert where I live. Thanks for sharing.

Quick and Easy Alfredo Sauce

I am giving this 5 Stars, I am sure it would have been extremely fabulous if I had followed the recipe. Had all the ingredients out to use, I thought. I was tempering the butter and cream cheese. My husband interrupted me, telling me "I had to go to Home Depot for him to get light bulbs for a ceiling fan he was installing." (Home Depot sold him the wrong lights) We have all heard a variation on that story. (Smiles) When I returned I started cooking everything. The aroma was wonderful, consistancy was the pitts. Maybe I should check the amounts of ingredients, before I start, everything was right except for the butter. I had doubled the amount of butter. Oh Well, add some more milk, after fixing all my mistakes. It came out tasting great, consistancy wasn't what I wanted. Poured sauce over Bow Tie Noodles, Served with Butterfly Pork Chops, Italian Mixed Veggies, Italian Garlic Bread and a Chardony Wine. (Moral to this review while cooking. Don't run errands for your husband while trying to fix dinner.) The next time I make this I will make sure I have all the correct amounts ready to go. Thanks for a great recipe. I have 2 Saint Bernards (200 pounds each) that stay in the kitchen with me while I cook, they are no trouble at all, they just lay there waiting for Mom to drop goodies.(Smiles) Peggy BigDogsMom

Onion Dijon Crusted Catfish

This was great, It is very spicey, if you don't like Onions and Dijon Mustard stay away, it will open the sinus (smiles). So easy to make. I like recipes that don't have a lot of ingredients and this hit the spot. My Husband loved this, best Catfish he has ever had other than fried. Just remember it is spicey. Thanks for the great recipe. Definate keeper

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

This was very good, leftovers are better as the flavors have a chance to mingle. I doubled the recipe. My husband and I work strange hours and I like to have food prepared, all he has to do is take it out of the freezer and warm up in microwave and he is good to go. Couldn't find yellow tomatoes, just used all red tomatoes. Also added some mushrooms and a package of frozen chopped spinach. Was suprized at the mildness of the Feta cheese, It was very good, thought it would have more kick. Thanks for a great recipe.

Bloody Mary Salmon

As someone else said "Salmon doesn't need any help". This recipe is fabulous. I let it marinate over night, using Extra Spicey Bloody Mary Mix. Will add horseradish next time. Served with baked potato, a nice green salad and White Zinfendel. Thank you for the recipe this is definately a keeper.
