Easy Chicken Taquitos

Reviewed: Oct. 20, 2012
Yummy and super easy! I make something like this often for a quick dinner on busy nights. The ONLY difference is that I used chicken that I boiled and seasoned myself and I usually crisp mine up on top of the stove in a little oil. But Kudos to you for throwing them in the oven. Cant believe I never though to do that! 5 stars for an easy, yummy, and healthier alternative to my frying, recipe! ( Lets not be so critical. She never said that they were authentic mexican taquitos. She said they are EASY! lol Heck, my Mexican friend taught me this same EASY way to make them. Yum Yum!

Better Than Sex Cake II

Reviewed: Oct. 20, 2012
This came out really good. I made it for ladies night at my house. The girls loved. Then my husband came home and he loved it too! I took the advice of another user and added chocolate morsels to the cake batter. Also, I used some of the cake batter to make 12 cupcakes. I omitted the milk because I was concerned about it being too soggy (I'm really picky with textures) and instead I used the handle of my wooden spoon to puncture deep holes through the cake and in the center of each cupcake. Then I filled each hole with caramel syrup, yum! Then I spread the whip cream on top. Topped with the crushed candy and even more chocolate morsels and then drizzled with both caramel and chocolate syrup! Excellent recipe with or without my alterations! thanks for a great recipe!

Kickin' Collard Greens

Reviewed: Oct. 19, 2011
The best collard greens ever! (sorry grandma). I could never figure out how to get my collards to taste like my grandmother's so I decided to look for something else. Stumbled across this recipe, cooked it exactly as directed (except I added lots of bacon). I let it slow cooked all day in a crock pot and it was the best. I made it for my aunt's b-day cookout party and they loved it! There was none left over! Thank you thank you thank you ken so much!

Sausage Potato Soup

Reviewed: Oct. 19, 2011
This was very tasty. The zuppa toscana soup at Olive Garden is my all time favorite so I was more than excited to try this one out. I took the advice of another recipe and added bacon and garlic. I also diced up 3 large potatoes instead of using frozen. I never really favored the kale so I used fresh spinach instead. Turned out great! Definitely one of my favorites! UPDATE: I do prefer the kale over the spinach I just use a little less kale than called for. Still so delicious! Also be very particular about what sausage you use because it makes all the difference in the flavor. I learned that the hard way. The first two times I loved the soup. when I made it again I used an off-brand that was on sale, I really did not like the outcome of the soup. Then I made it again with the same sausages I used the first two times and it was delicious

Kidney Beans and Rice

Reviewed: Jul. 30, 2011
I loved it!. I was looking for a kidney bean recipe for a side dish so I eliminated the beef all together. I sauteed onions in extra virgin olive oil, added minced garlic, then added beans and seasonings, and bay leaf as instructed except for I never measure my season salt. And I did not have any chili powder (surprisingly). I used dried oregano (because that is what I had) I had to use a can of dice tomatoes and green chiles (because thats all i had in the pantry too ). I added a dash of cayenne pepper in addition to the black pepper. Add the rice, and let it simmer (but I didn't let it simmer long). It came together really nice. I really loved the taste of it! And i will definitely make it again the exact same way!!!!!
