Salsa Chicken

Magnificent Cheesy Brown Rice

a little bland and dry as is. i even added 2 cloves of garlic with the veggies, and a little butter and a splash of 2% milk along with salt, pepper, and parmesan cheese toward the end. i will try to work with the recipe, though, because i like the idea of sneaking veggies into rice.

Quick and Easy Mexican Chicken

very tasty and tender. i used thighs instead of breasts, and browned in olive oil on medium-high for about half the time suggested. i also used more salsa than recommended, probably almost double, so i could use the sauce from the pan on rice. might even just cook over rice next time as a casserole. could be a one dish recipe if you use a cast iron skillet.

Mexican Sour Cream Rice

a nice side, but lacks oomph. based on the reviews i read, i doubled the sour cream and the chilies, and added salt and pepper, and they had a nice creamy consistency but still need more flavor. may try this again, but add tomato sauce and/or fresh garlic.

Best Black Beans

delicious. took the advice of another reviewer: sauteed onion and garlic in olive oil first, added 1 cup of chicken broth, then seasonings and drained, rinsed beans. intended as a filler for an already great meal, these were easily my favorite thing on the table.

Grilled Tomato, Onion, and Bread Salad

yummy! i didn't have fresh basil, so i added dried basil to the seasonings and olive oil for the bread. i just tossed the bread in the pan i use for grilling vegetables, didn't bother with skewers, and it worked great. i would recommend waiting to toss in the dressing until you are nearly ready to serve, the bread got a little soggy as it sat.

Easy Beer Bread Mix

I made this a sweeter bread to accompany our corned beef and cabbage meal for St. Patrick's day. Omitted the onion powder and italian seasonings, and added 1 T. white sugar and 1/4 cup dried cranberries. The beer I used was Honey Brown to give it a little extra oomph. It was delicious, not a crumb left at the end of the meal. Going to follow the recipe tonight to go with the soup I made from the leftover veggies and corned beef drippings. I will probably just round to an even 3 cups of self rising flour, doesn't seem necessary to add plain flour and then baking powder anyway.

Meatball and Mushroom Stroganoff with Dill Sauce and Noodles

i did this in the crockpot tonight. i put all ingredients in on high for about 3 1/2 hours. everything was fully cooked, and tasted great. i needed to thicken the sauce, and even then it was a little too liquidy to eat on a plate. my kids were annoyed that they couldn't keep their salad out of it. :-) but the recipe is yummy and with a little tweaking i think it will be a good slow cooker recipe, too. definitely a keeper!

Spinach Rice

i made this as a main dish with cheddar instead of processed cheese, and about 1 1/2 cups of leftover rotisserie chicken, shredded, and the whole family loved it. I have 3 kids, ages 10, 6, and 3, and these people are not easy to please! I will do this again, with more rice next time because it did just seem like a side dish with chicken added.

Delicious. I made this, along with homemade chili for chili dogs, to rave reviews. I followed the recipe exactly, and doubled it. Chilled for a full day before serving, and the flavor was great. This time I am adding 1/2 tsp each of celery seed and mustard powder for a little more complexity.

Tender Italian Baked Chicken

Very good. I added two minced cloves of garlic to the mayo mixture, but felt it still could have used more flavor. Maybe some oregano next time? It was very moist, and the proportions worked for 6 breast halves. I will definitely try again.

Pear and Blue Cheese Salad

Delish! I made it exactly as the recipe states, except that we only used about half of the dressing on the salad, and that I only used 1/8 cup of walnut oil due to the cost. It was very good that way and I didn't notice it lacking anything.

Clark's Quiche

Yummy! A lot of prep time, but the end product was well worth it. Im sure it will go faster next time, and i have the second one in the freezer for an easy heat-up on a busy school night. It smelled great cooking and got everyone excited to try it. Even my picky kids approve and had seconds. I did leave out the mushrooms b/c I knew they would never even taste it otherwise. I also left out the ham and doubled the bacon b/c I am making ham tomorrow. I'm sure that would be great in here though.

Creamy Mashed Potatoes II

very yummy. i used onion and chive cream cheese and topped with shredded cheddar before baking for a group of about 10. my entire 9X13 was gone after the meal. i served it with meatloaf and it was a great accompaniment.
