Carrot Cake III
This is a wonderful recipe! I did make some changes that worked out very well. I added some currants, a diced Granny Smith apple, and left out the pecans. Also reduced the oil to 1 cup. I did put the pecans in the frosting, but used a recipe that was similar that called for 1/4 c. butter and 3 cups confectioners sugar. VERY DELICIOUS!! Was a huge hit!!

Pumpkin Swirl Bread
I followed the recipe, but didn't double it. Although the tester came out clean, the bread was wet when cool -- not runny, but solid and wet. Also, I really couldn't taste the cream cheese. Not sure what happened here. Maybe it needed to bake longer, but I didn't want the outside to burn.
