Shredded Brussels Sprouts

This is a keeper! Didn't have green onions or pine nuts (not that I would use the pine nuts), so I added some chopped red onion & about 1 tsp. chives. I also added 1/2 tsp red pepper flakes w/ the brussel sprouts & onions & some grated Parm. Cheese when I served it. It was excellent. My picky 5 yo really liked these. Don't be afraid to try them even if you *think* you won't like them.

Pumpkin Bread IV

Yummy, yummy for my tummy! Rarely do I follow a recipe to a T, so here are my additions: I added 2 tsp. of all the spices instead of the 1 1/2 tsp. I also added 1 tsp. of allspice, 1 tsp. ginger, 1 tsp. pumpkin spice and my own secret ingredient, 1/2 tsp. dried Orange Peel. One reviewer said they used Rum Soaked Raisins, but since we are not big raisin fans, I decided to add Brandy Soaked Dried Cranberries instead, which turned out great! This recipe yielded 36 muffins. Also, for those of you who are lost as to how long to bake the muffins, they bake for anywhere around 22-24 mins. depending on your oven. P.S. I also just threw in a whole 29 ounce can of pumpkin puree.

Stacey's Fabulous Purple Potato Gratin

First off, yum! Okay I had purple potatoes once at my parents house a few summers ago, and I fell in love. My mom had grilled them but I didn't have enough purple potatoes to grill (I also purchased them in a mixed bundle at Trader Joes), so I thought I'd try this recipe. OMG, soooo good. I couldn't follow the recipe to the T because I didn't have everything it called for but these were the changes I made: 1.) I used about 8 small/medium potatoes (not petite) purple, red & white; 2.) Instead of flour, I put them in a paper bag and tossed them with about 1/4 c. Louisianna Seasoned Chicken Fry; 3.) I didn't have leeks so I used 3 green onions instead; 3.) I didn't have goat cheese, so I too used cheddar (however I didn't measure it!). OMG, this was the best Potato Gratin I've ever had. I loved it! I think the Seasoned Chicken Fry really made the difference. I never added any salt and this tasted just fine.

Kettle Corn

This is awesome! Definately a keeper. I followed the suggestions of the other reviewers and made the corn with Butter Flavored Shortening & also added about 1 tsp salt to the sugar & corn. I played around with it a lot, I found that the best pan to make it in for me was my Wok. It seemed to pop faster and better than in a pot. I also added colored icing (I read the suggestion wrong and bought that instead of the icing coloring), and made some purple and orange popcorn to give to our neighborhood kids for halloween. I am so glad I found this recipe! ****Update**** It has been 11 days since I discovered this recipe and I have made approximately 22 batches of this! I made some for the neighborhood kids I know for Halloween (6 batches) & some for my sons classroom (8 batches). The rest has been for the family & friends. I just watned to add that I also tried the O.R. Butter Flavored Popping Oil and it's the same as using the shortening. I will continue to use the shortening as it comes out cheaper. One bottle of the oil makes 4 batches. One package of 3 bars of butter flavored shortening make 12 batches and it is cheaper than the oil.

Hot Mocha Drink Mix

Let me start off by saying, this was good. Now, I didn't give it 5 stars because although I followed the suggestions of the other reviewers (I added 1/2 c more sugar, increased the coffee by 1/8 c & added 1/2 tsp. cinnamon), I still felt like it needed a little something. I also measured out the sugar a day before & added 2 tsp. of vanilla and let it sit out until it dried. I think this added a nice touch but I still think it was missing something.

Delicious Pumpkin Bread

Okay 1st, let me start out by saying, I bake ALOT. I do not consider myself in the same league as a Professional Baker, however, I do know my way in the kitchen very well. That being said, I was very disappointed with this recipe. The bread was waaaaay to moist for my taste and even with me adding extra cinammon, nutmeg, cloves, vanilla & allspice, this still left more to be desired. It tasted like bread with a light pumpkin flavor, to be honest. Plus, like another reviewer said, it had a very "eggy" taste to it. I like a more bold spicy (cinamon spicy) flavor in my pumpkin bread. Sorry, this recipe didn't do it for me...

Dad's Pan-Fried Green Beans

This was a good recipe. I did as some of the other reviewers suggested and cut down the soy sauce to 2 T instead of 3 (I also don't like my food to taste too much like soy sauce). I didn't have whole fresh green beans on hand, instead I used a bag of 1 lb. frozen french cut GB and they turned out good. I have a family of six and this was our only side with our dinner so we had just enough for all of us to have one good serving.

Bob's Awesome Lasagna

I make a "version" of this lasagna, with exactly the same ingredients (plus an egg for the cottage cheese). I don't add any sauce to the meat, instead I add 1/2 cup of sauce to the bottom of the pan, then I add the rest of the spagetti sauce to the top of the lasagna. I think what makes this lasagna so good is that it is very simple and the most picky eatter will even like it. It's not by any means plain, tastes great and is so easy to make.

Potato Tacos

My mom used to make some tacos similar to this when I was growing up except she used real Mexican Cheese & she sauteed white onion & added it to the potato mixture instead of putting green onions in them. I love these tacos. We also put lettuce in them and ate them with Salsa and Parm. Cheese. Salt & Pepper should be to taste too.

Restaurant-Style Zuppa Toscana

The soup was yummy! I added a few more potatoes and used two different kind, red and purple potatoes. It was a fantastic soup. Very much like TOG's Zuppa Toscana. Would definately make this soup again.

Snow Flakes

This is probably the best Spritz Recipe I have tried. I had a little bit of trouble with the cookie press because I grated the orange rind too big. Next time I will make sure I grind it finer. I made snow flake shapes and I dipped them in powdered sugar ~ it added a little something extra...yummy! I will definately make these again.

Mini Cheesecakes I

This was a good recipe. I gave it four stars only because it doesn't taste exactly like the real stuff, but it's a good substitute. Kids and grownups alike liked these very, very much. I decorated them with chocolate drizzle and some with cherries.

Urban Legend Chocolate Chip Cookies

I had to try these to see what the buzz was about. They were okay. I didn't think they were anything extraordinary. They were definately VERY chocolatey, which I liked, but for someone who doesn't like a really sweet cookie, these would be a turn off. I would make these again but I'd probably cut the white sugar down by 1/4 cup.

Super Fajita Marinade

I gave this one a 4-star becuase I thought it was just okay. My husband and kids really liked the fajitas (made them w. chicken), but I didn't think they were the best I've ever had (I'm mexican so I've had some awesome stuff). I will probably make it again because I did like it, but next time I probably won't add so much lime.

Chicken Marsala

This was pretty good. I thought it needed a little bit of salt, but it was still good overall. I have few recipes I make "by the book", so of course I added my touch to it and added 2 garlic cloves, 1/4 cup chopped onion and 1 tablespoon fresh thyme & parsley to the butter/oil before I added the chicken. It turned out yummy!

Polvorones de Canele (Cinnamon Cookies)

Yummy! These cookies were good. I had been looking for a recipe similar to this one. I substituted Anise Seed Extract instead of the vanilla ~ since the cookie I was looking for had Anise Extract in it. I am happy I tried this because they came out perfect. Also I followed another reviewers suggestion and added a full teaspoon vs. the 1/2 tsp. it calls for in the recipe. Just as another reviewer stated, these cookies are meant to be dry. Polvo means dust.
