Portobello Mushroom Burgers

So easy! I put my portobellos in a gallon freezer bag and poured the marinade over them. They ended up sitting for an hour or more before we got them on the grill. Everyone loved them!

Easy Guacamole

It blows my mind how many guacamole recipes have 20+ ingredients. This recipe is simple and perfect. I followed it exactly and I wouldn't change a thing! I'm and American living in Berlin, and Germans aren't very familiar with Mexican cuisine. I made this for a party and I got tons of compliments (and recipe requests) for my "Avocado Dip". Thanks so much for the recipe!

Fresh Tomato Salsa

Delicious and easy! As others suggested, I added a clove of garlic, and I skipped the cilantro because I generally dislike the flavor. I got lots of compliments!

Banana Banana Bread

Nice and fluffy! I only used half a cup of sugar and added a teaspoon of vanilla. I made muffin instead of a loaf, but they still needed 40 minutes in the oven. I made a double batch for a party, and they were a big hit! My only complaint (and it wasn't the recipe's fault) - for the first batch I used paper muffin cups, and it wa a disaster. I'm not sure exactly what went wrong, but the paper wouldn't peel off without taking half the muffin with it. I switched to just a greased muffin tin, and those were perfect.

Old Fashioned Mac and Cheese

I cut the recipe in half and just used whatever cheese I had in the fridge (mostly cheddar plus some gouda and a little maasdamer and parmesan), but otherwise followed the recipe exactly. It was perfect! I'm already looking forward to eating the leftovers tomorrow.

Golden Potato Soup

I'm vegetarian, so I just dropped the meat and substituted vegetable stock for the chicken bouillon, and my boyfriend hates celery, so I substituted a couple carrots, cubed. I also left the peel on the potato (I'm lazy when it comes to peeling ... and it's healthier, right?). Delicious!! It's very hearty and filling, but tasted so good that we kept eating even after we were full :) Went to bed with stomach-aches. Worth it!

Apple Mashed Potatoes

DELICIOUS! I made it meatless by frying the onions in vegetable stock, and I substituted parmesan cheese for the bacon on top. I also left the peel on the mashed potatoes (purely out of laziness), made sure to cut them into small enough pieces to avoid huge pieces of peel in the dish. Will definitely make it again!
