Cheese Ravioli with Three Pepper Topping

I loved this, and so did my kids. I didn't halve the broth, and it turned out just fine. I think it's a matter of being patient enough to let it reduce. The flavor was excellent.

Slow Cooker Chicken and Noodles

This was very easy, but I thought it was just OK. It was pretty bland, and I'm normally a bland food-type of girl. It's probably a good base recipe. The only thing I changed was substitute whole wheat egg noodles, and add chicken bouillion.

Mexican Venison Skillet

I read the reviews saying it was bland, but since I was feeding a 3 and 1 year old, I left it as was. I thought it was fine. I'm always looking for a way to hide the taste of venison, since I don't like the gamey taste, and this worked.

Potato, Bacon, and Corn Chowder

Delicious! I felt kind of dumb, because I read the reviews that said "I didn't have any celery," and I thought, "Who doesn't have celery?" Then I went to my fridge, and I didn't have celery. Anyway, I used green bell pepper, and it was good, although I'm sure the taste was different. I also replaced half the milk with chicken broth. This definitely wouldn't feed 8. It fed my husband, one-year old, 3 year old and me with no leftovers. It was delicious, though!

Zesty Porcupine Meatballs

I make a version of porcupine meatballs every Groundhog day, and we call them Groundhog meatballs. I don't know if it was just this recipe, or if I'm getting better at meatballs, but this was my best time yet. I followed the recipe exactly, except used garlic salt instead of onion salt because I didn't have any. The meatballs came out moist and yummy. I served them over mashed potatoes.

Mexican Shepherd's Pie

My 2-year old daughter loved this! I did add some stuff to make it more like the tamale pie I remembered as a kid. I added a drained can of kidney beans, and I added an extra cornbread mix because I thought the beans might have beefed it up enough for me to need more cornbread. I thought it was too much cornbread in the end, but my husband said he liked it that way. I also used mexicorn.

Quick Artichoke Pasta Salad

It wasn't super-flavorful, but it was super easy. I really liked that about it. I used ditalini pasta. I left out mushrooms because I don't like them, and added roasted red peppers. I think it would be good if I added feta. It wasn't that it needed more dressing. It just needed more "something."

Zucchini Herb Casserole

I changed this up a bit. We had a HUGE bunch of home garden vegetables to use up, so I added carrots and fresh basil along with the zucchini and tomatoes. I used shallots instead of green onions because that's what I had, and I used a wild rice box mix with the seasoning because I read this was a bit bland. I loved the result! It was good, cheesy and felt homey and light at the same time.

Ground Turkey Casserole

This is a really good base recipe. I added oregano, basil, crushed red pepper, diced green peppers and onions to the ground turkey. In addition to the tomato sauce, I added a can of diced Italian tomatoes. It was really good!

Cozy Cottage Beef Stew Soup

This made a really good soup, not so much a stew. After reading other reviews, I decided to leave out some liquid, so I only put one chicken broth in and left out the tomato sauce. The result was some really velvety soup. I also put in a pound of stew meat instead of 3/4, and cut my vegetables larger, rather than dicing like the recipe recommends. This fit perfectly in my 5 quart crock pot, and was definitely ready after one hour on high and 8 on low.

Pork and Green Chile Casserole

I only had one can of green chilies, but it was still really good! We topped it with light sour cream. I thought the pork came out super tender. I also sauted onions with the pork, and used cut-up pork roast instead of pork chops because that's what I had.
