Martha's Spanish Rice and Sausage

This was OK, but it took a lot longer to cook than it said. I probably should have covered it while simmering. I added extra water, extra tomato sauce and black beans.

Slow Cooker Taco Soup

One of my favorites! I added a packet of ranch dressing mix, and we always just use whatever beans are on hand- we didn't have chili beans, so we used extra kidney beans.

Pumpkin Chocolate Chip Muffins

Delicious! We just made these- they did stick a bit to the wrappers, but we didn't really let them cool. We used mini chocolate chips, and I didn't measure the pumpkin well, so it might have been more than 3/4 cup. We also were out of nutmeg, but I added more cinnamon.

Broccoli-Cauliflower Salad

I know I used more broccoli and cauliflower than the recipe called for, but it was definitely delicious. Edited to add: I didn't have any bacon tonight, but it was still pretty good.

Tomato Cucumber Salad

This was super delicious and refreshing. I did the recipe almost exactly, except for I only did a quarter of an onion, and I didn't measure how much lemon juice I was squeezing. The onion is a matter of personal preference, I think.

American-Italian Pasta Salad

I loved this! I used slightly less pasta because I read the reviews that it was dry, and I thought it would be easier to do less pasta than more sauce. I also added red pepper because I had it on hand.

Mac and Cheese Henwood Style

I never really get a homemade feel from stuff with Velveeta, but this was totally delicious. The little bit of cheddar and blue cheese (I used Gorgonzola) took away the processed taste from the Velveeta but left the creaminess.

Soft-Shell Chicken Tacos

Super amazing and super easy! We used fresh onions and peppers. I cooked the chicken first, then took the chicken out, added a bit more oil and cooked the peppers and onions. Then I added back in the chicken and heated through.

Corn, Sausage and Pepper Chowder

I thought this was delicious, and I thought it thickened pretty well. The only changes I made were that I used russet potatoes because that is what I had, and I didn't bother to puree the corn.
