I have 3 children, ages 3,7,and happily married going on 11 years now to my sweetie I met at community college.
My favorite things to cook
Mostly I cook simple italian, mexican and american dishes for my family. But I love trying new recipes and new flavors and I try to expand my family's palate. I also am an avid baker...breads, pastries and desserts.
My favorite family cooking traditions
Every year I make a lamb cake for Easter, we bake cookies by the dozens and dozens at Christmas and of course I bake treats for Thanksgiving dessert.
My cooking tragedies
I hate that there are some simple things that I just can't seem to do correctly, soup, for instance is a real challenge and I've yet to make a decent simple Chicken soup. I also hate when I'm cooking something very easy and I end up burning it, like a banana bread, for instance! Grrrrr.

Szechwan Shrimp
This was really good! I served it over cooked linguine and cut back on the heat a little, for our kids, but sprinkled the red pepper flakes on my and my DH's finished plates. I used a bag of stir fry veggies that I thawed under warm water and heated in the pan with the shrimp and garlic, and added just a pinch of cilantro, but other than that, no changes...this was sooooooo delicious. Definetly a keeper.

Taffy Apple Salad
I just made this for my son's 3rd birthday as a side to some grilled burgers. Everyone raved about it. I doubled the recipe and the only changes I made was to switch the vinegar to apple cider vinegar, I used one can of pineapple chunks and one of crushed pineapple (well drained) and added fewer peanuts. My Mom even asked if I could please make another big batch to bring to my Dad's birthday party next Sunday! Delicious and really easy to do!

Fruit Dip V
Great flavor, not too sweet. Very very thick, though. My kids and DH loved it. I think it would make a very nice after school treat spread onto graham crackers topped with sliced strawberries!
