Melinda's Porcupine Meatballs

This recipe was okay. Just okay. The sauce is very unflavorful, as well as the meatballs. I like bland foods, and this was too plain for me. I added a lot of other spices to the sauce just to make it taste like something other than watery tomato sauce (which is what it is in this recipe). The meatballs were fine. We wrapped ours in cabbage leaves and baked them, and the meatballs themselves came out fully cooked and they tasted fine, but completely non-exciting. Won't bother making this one again.

S'More Bars II

The crust didn't turn out at all--it was WAYYY too much crust, and it was crumbly. The rest of it technically turned out okay, but I felt that overall it was a fairly plain dessert. I'd rather have a regular s'more anyday. If I'm going to take the trouble to make any kind of pie, this one isn't worth it. Just not enough flavor, and not good enough to try again.

Easy Chicken Enchiladas

Easy and basic--many people will want to add some oomph. Instead, I dip flour tortillas into enchilada sauce, and then make a basic filling of 1/2 pkg cream cheese and 1/2 pt of sour cream (melted on the stove together so I can really mix them), and mix that with 2 cups of shredded chicken. Put the filling into the dipped tortillas. That's the basic, delicious but bland start. Then everyone can add a spoonfull of their favorite toppings before rolling the enchiladas. Add guacamole, or salsa, or chilies to add a bit of zip. If you want even more flavor, you can add a bit of seasoning to the cream cheese/sour cream mix. Roll the enchiladas and place in a baking dish seam side down, top with some shredded colby jack or pepper jack cheese, cover in foil or a lid, and bake at 325 for 25 mins. SOoo good and it's a great recipe where everyone can customize their own jut a bit.

Easy Chocolate Tofu Pie

This was surprisingly great! My boyfriend and I were hosting friends for dinner and one is a vegan, so on a whim I decided to try this pie. We didn't have high hopes for it but it came out SO. GOOD. It tastes like a chocolate fudge filling. I don't own a large food processor so I didn't blend my tofu down as well as I should have and it still turned out fine. I used semi-firm tofu too since that's all my grocery store had. I tossed in a few drops of almond flavoring to the batter and it gave a nice richness; I think it would be AMAZING with cherry or raspberry flavoring. This is good for a dessert, not just "good for a vegan dessert".

Chicken Pot Pie IX

Really good! I took other reviewers suggestions and I did my peas and carrots with chicken stock. I boiled the chicken in there too and it was great! I doubled the sauce like other people had mentioned and it was far too much left over...maybe 2/3 would be the perfect amount. I did season up the sauce a LOT.
