Chocolate Chip Banana Muffins

Just made these. They are so delish. I added mini chocolate chips because that's all I had on hand. I didn't have the regular size muffin pan, so I used my larger pan that made 6. They were giant muffins. I cut one in half because of its size, but it was too good to leave, so I ate the whole muffin. Great recipe. Thanks for posting.

Big Soft Ginger Cookies

Oh my goodness. I just sampled one of these and they are deeelicious. I followed everything to a T except I didn't want to roll them in plain sugar. What I did was mix Hershey's unsweetened cocoa and sugar and rolled the cookies in it before baking. I also flattened them with a fork crisscrossing the lines. They look so pretty and taste fantastic. I will not just make these for holidays but also when I feel like having them again which may be every month or so. Thanks for a great recipe. A real keeper.

Zucchini Patties

I made these for dinner tonight and they were just delicious. Thanks so much for posting. I read a review where someone used instant potato flakes instead of flour. I also want to try it that way. Hard to just eat one or two or three. I think I had four and I made them large.

Basic Crepes

I just made crepes for the very first time because I always thought they would be difficult to make. Super easy. They came out perfect. I filled them with a mixture of some broccoli florets I made with a little olive oil and garlic. I drained the broccoli, and added an egg, a cup of ricotta cheese, 1/2 cup of mozzarella cheese, some fresh basil, black pepper and some parmesan cheese. Made a quick marinara sauce. They were out of this world Thanks for posting the crepe recipe. I 'm so proud that I used this crepe recipe and made homemade manicotti . Thanks so much again.

Creamed Peas and Potatoes

My Mom made something similar to this. The only thing different is instead of dill, we use fresh mint leaves. The combination of peas and mint go together so well. I will try this with the flour and milk. We used chicken broth. I am anxious to try it this way, but I will still use the mint instead of dill. If you have never had fresh mint leaves with peas, try it.

Fluffy Pancakes

Hi, made these this morning and they are the tops. I doubled the recipe so I put 1/2 tsp. of vanilla and instead of two whole eggs, I used 4 egg whites. I mixed everything together and beat the egg whites separately and then mixed it in. Tastes wonderful. We really enjoyed these. A keeper for me. Thanks for posting. Airama

Salmon Chowder

Kenulia, I wanted to let you know that I froze a container to get my son-in-law's opinion. He is an excellent cook. I just received a phone call from him telling me it was the best that I had ever made. He said that it was excellent restaurant quality. So there you have an opinion from an expert. Grandma Johnson's Scones

These scones are just fabulous. I made them and brought them to my daughter and her family for Christmas. I made them with dried cranberries, chocolate chips and coconut. I will be making these often. My next try will be with cranberries and orange zest. My son-in-law raved about them. I knew they had to be good because he is a fantastic cook. I'd rate this a 10 if I could. Thank you so much for sharing your recipe. I am very proud of myself. Try this recipe, you won't be disappointed. Update: I just made these scones again today and I put in golden raisins, choc. chips and orange zest. Also added 1 tsp. vanilla and cinnamon and also used brown sugar instead of white. These are so fantastic. The ultimate BEST. Thanks for a great recipe.

Spaghetti Squash I

James, What an awesome recipe. Last night I had Speghetti Squash for the first time. It was absolutely delicious. I used a little more garlic. I didn't have feta cheese so I crumbled Asiago cheese. I also added 1/3 of a yellow pepper and 1/3 of a red pepper. It looked so colorful and beautiful. Thank you so much for sharing your recipe with us. I will be making this very often. I can't believe I missed out on Speghetti Squash all these years. Thanks again. ~ Airama ~

Homemade Butter

I have used the jar method before, but I find that if you pour the cream in a deep bowl, you can use your mixer to beat. I would start out on slow and increase as it thickens. When it goes to whipped cream, I take some out for toppings. When it starts turns into buttermilk, I save it to use on pancakes. Then keep beating until it turns to butter draining all the liquid. Make sure you start out slowly or else it will splash all over. This way is a lot easier and less tiring. Thanks for posting this DD.

Award Winning Peaches and Cream Pie

This pie is incredible. It's awesome. This is the best I have ever made. I didn't have a pie plate, so I doubled the recipe and used a baking pan and it was just perfect. Lentil Soup

Marie, thanks so much for posting this awesome recipe. We had it for dinner. I changed a few things tho = I used a little less olive oil, 4 carrots and 4 stalks of celery instead of 2. I used frozen chopped onions because my hands break out if I touch fresh onion. I didn't have a 14.5 can of crushed tomatoes so I used a 14.5 can of whole tomatoes and crushed them myself. Also, in place of the water I used 4 14.5 cans of low sodium chicken broth. I used 1/2 cup of escarole instead of the spinach. I didn't have regular vinegar so I used balsamic. It was the best lentil soup I have ever tasted/made. Thanks again for sharing this with us.

Beef Stew VI

Paula, thank you so much for sharing this recipe. I made it for dinner and it was the best I have ever made. I did make a change. I floured the beef cubes and then browned them, when they were brown I added 1/4 cup of red wine. I simmered for approx. 1 minute and then added two 14 1/2 oz. cans of beef broth. I let it simmer 2 1/2 hours. When done, I cooked 3 med. size potatoes in the microwave and mashed them very good and added to the stew to thicken the broth. I didn't use any cornstarch. Let me tell you that the flavor was awesome. I will make this again and again and use the wine again and thicken with mashed potatoes for flavor. Thank you. Opps! Forgot to mentioned that I eliminated the rosemary.

D'Amaretti Biscotti

I thought I would come back again to rate. I have made these Biscotti since I first found this recipe. I just got done making a double batch. I didn't have any almonds so I sub dried cranberries, didn't have lemon so I used orange zest. These are the best and everyone whose tried them rave about this recipe. Thanks again Rosina.

Awesome Broccoli-Cheese Casserole

Stacy, thank you so much for posting this recipe. It REALLY is awesome. I made a few changes. Instead of 1 cup of mayo, I used a little over 1/2 cup of sour cream. I used fresh brocolli only because I happened to have it. I'm sure it would be the same with the frozen. I will use frozen next time. I also used monterey jack cheese and crushed some low sodium ritz crackers for the top. I also sprayed butter flavored pam on top of the crumbs. I want you to know that this is the best brocolli I have ever had. Thanks again.

Beth's Scalloped Cabbage

Thanks for this great recipe. I made some changes based on the other's reviews. I drained the cabbage for at least l/2 hr. to make sure I got most of the water out. I also used pepperjack and cheddar cheese. I topped it with ritz cracker and sprayed butter spray on top. Excellent. I give it 10 stars. Thanks so much for posting this recipe. Definitely a keeper.

Andrea's Pasta Fagioli

Wanted to rate this again. I doubled the recipe and made this Sunday. Everyone raved about it. I used chicken broth instead of water, baby shells in place of ditalini. I also added 2 more cans of cannelinni beans for the doubled recipe. I gave a container to each of my brother's families. They loved it. This is an outstanding dish. I will be making this at least once a month. Great comfort food. Thank you Andrea for posting this winner.

Linda's Fake and Bake Chicken

Linda, This is a great chicken recipe. It was delicious. I froze some and when I took it out of the freezer, I put it in my toaster oven and it was just as crisp and delicious. The only thing different is I was missing 2 ingredients, paprika and onion powder. Also I had to remove the skin because of colesterol. But I want you to know it was still very moist inside and crisp on the outside. This is a definite keeper. Thanks for sharing. Airama
