Pan-Seared Tilapia
My end result didn't look nice and golden like the picture. It seems that 4 minutes was too long in my cast iron skillet on medium high heat (fish burned). Taste-wise, I found it just ok even adding a few of the recommended seasonings from other reviews. I do think that the fish would've been bland had I only used salt and pepper according to review.

Sweet and Tangy Sauteed Collard Greens
Short on time with hungry mouths to feed, I searched and searched for a recipe that would allow us to eat greens in under an hour. I was skeptcal (being from the South) but they were SO good. My husband and children agreed. I didn't have balsamic vinegar so I substituted with apple cidar vinegar and it worked well. I also added chopped garlic cloves as recommended by rodrigouno...and I cooked mine for 12 minutes as well.

Good Old Fashioned Pancakes
Excellent pancakes! I wanted to make my family a late breakfast today but realized that I was out of pancake mix. Luckily I came here to old faithful and was happy to see that I had all the necessary ingredients on hand. The only thing I did differently was add 1/2 teaspoon of vanilla flavoring to the egg mixture (as suggested by TEVANS211). My husband didn't believe the pancakes were made from scratch...and both he and my son said they were very fluffy. I won't be buying box mix again....who needs to with this simple, winning solution? Thanks for sharing!
