Susan's Vinaigrette Coleslaw

Simple and by using honey (1 T), I was able to make it more paleo, less GMO. OH, after marinating and refrigeration, was tasty and crisp.

Carrot Souffle

WOW! First souffle and it was a breeze. I made it SAVORY by NOT adding vanilla and sugar. Instead I steamed the carrots with 1/2 a leek, and 2 garlic cloves. When the cooked veggies were cool enough, I added everything (but the vanilla/sugar) AND 1 t black pepper and 1/2 C shredded Italian cheese into a food processor. When fully blended and smooth, into the oven it went. Cooked up nice and tasty! I'll definitely be making this one again!

Eggplant Chips

I altered this quite a bit and it turned out good, even when cold. Whether you eggplant chips are soft versus crisp is determined by your cutting skills! I used coconut oil, smearing both sides before placing on the cookie pan. I then sprinkled my spice mix and baked at 400 for ~12 min per side... Until golden. Watch or you'll have overdone chips! 2-4 T coconut oil 1/2 t salt 1/2 t pepper 1 t gran garlic 1 t parsley 1 t oregano Mix spices together and place in a shaker to get even distribution over eggplant. I only sprinkled one side, although I did turn them half way to ensure even baking.

Lemon Chiffon Pudding

I didn't cook it long enough, so don't be afraid to let it get brown. I used almond milk. Worked fine! And was fairly easy to put together.

Asian Asparagus Salad with Pecans

Tasted good... But I'm not one of those great pre-planners, so some time I need to make it 24 hrs ahead and see if it's better! Did it a second time and used broccoli and asparagus, then grilled... WOW!

Sweet and Spicy Green Beans

I had to modify this (no garlic chili sauce) and it was still good. 2 T dehydrated garlic, 1 T red pepper flakes and about 1 t rice vinegar. I liked it cold. Will definitely make again.

Spinach Dip

Careful with the onion... Strong flavor in a subtle dish. Otherwise, loved it. Used fresh spinach, which I had to guess the amount. Served it on homemade crackers. Yeah!

Brussels Sprouts Gratin

WOW. Real sleeper of a recipe and good! I subbed oatmeal for breadcrumbs, 1/4 lb pork sausage for bacon and 1/2 C chardonnay with ~1/4 C sour cream for the cream. And I was a little heavy with the Monterrey jack cheese (no Parmesan)... Aw shucks!

Avocado Salad

Straight lime juice was a bit bitter. Maybe it was the lime? Next time I think I'll add my standard: cumin and coriander! I served it on lettuce w/ shredded cheese, and then later as a main meal I added chicken sausage... Good.

Arugula Salad with Citrus Vinaigrette

The dressing was bland. Seeing as that is the key component, I was not impressed. I worked with what I had. Red bib lettuce and red apple. I sauteed chicken sausage, then added diced onion, thin sliced bell pepper and thin diced red apple to the saute until lightly cooked (soft). I topped this on the lettuce and added the dressing and sliced almonds. I will repeat the process, but will use another dressing. One with more zing.

Curried Leek Soup

First curried thing I've ever liked. I was uncertain as to whether it was red or black pepper... Went with red. Added 1 1/2 t curry and ~1 t red pepper, to make it spicy enough for me. Added about 1-2 C extra water at the end as it had cooked down.
