Spinach Frittata

I had to bake it due to stove issues. Seemed soggy/runny on the surface and that was after 20 min in the oven at 350*F. Seemed bland as well.

Jambalaya Casserole

Easy to make into smaller portions. I used Bragg's Aminos instead of browning sauce. And I just kept it in the skillet to cook.

Avocado Salad

Straight lime juice was a bit bitter. Maybe it was the lime? Next time I think I'll add my standard: cumin and coriander! I served it on lettuce w/ shredded cheese, and then later as a main meal I added chicken sausage... Good.

Not bad. I don't microwave, so I used brown rice (I suggest pre-cooking it) and Bragg's Aminos instead of soy sauce. But otherwise, tasty and nutritious.

Arugula Salad with Citrus Vinaigrette

The dressing was bland. Seeing as that is the key component, I was not impressed. I worked with what I had. Red bib lettuce and red apple. I sauteed chicken sausage, then added diced onion, thin sliced bell pepper and thin diced red apple to the saute until lightly cooked (soft). I topped this on the lettuce and added the dressing and sliced almonds. I will repeat the process, but will use another dressing. One with more zing.

Lemon Chiffon Pudding

I didn't cook it long enough, so don't be afraid to let it get brown. I used almond milk. Worked fine! And was fairly easy to put together.

Curried Leek Soup

First curried thing I've ever liked. I was uncertain as to whether it was red or black pepper... Went with red. Added 1 1/2 t curry and ~1 t red pepper, to make it spicy enough for me. Added about 1-2 C extra water at the end as it had cooked down.

Sweet and Spicy Green Beans

I had to modify this (no garlic chili sauce) and it was still good. 2 T dehydrated garlic, 1 T red pepper flakes and about 1 t rice vinegar. I liked it cold. Will definitely make again.

Asian Asparagus Salad with Pecans

Tasted good... But I'm not one of those great pre-planners, so some time I need to make it 24 hrs ahead and see if it's better! Did it a second time and used broccoli and asparagus, then grilled... WOW!
