Carrot Broccoli Salad

Reviewed: Jul. 20, 2014
Short, sweet and simple. I used almond slivers and homemade flax mayonnaise.

I added red pepper flakes, no lemon pepper, and only marinated for an hour. Good!

Spinach Dip

Careful with the onion... Strong flavor in a subtle dish. Otherwise, loved it. Used fresh spinach, which I had to guess the amount. Served it on homemade crackers. Yeah!

Make-Ahead Slow Cooker Beef Stew

Reviewed: Nov. 11, 2013
Gooood... I didn't use the broth or onion soup mix. And the time seemed excessive, so I just cooked it on the stove in my cast iron for 2+ hours and it was great!

Boilermaker Tailgate Chili

Good taste, but overkill on the repetitive spices. So I simply cut back or cut out what was too much.

Brussels Sprouts Gratin

Reviewed: Nov. 7, 2013
WOW. Real sleeper of a recipe and good! I subbed oatmeal for breadcrumbs, 1/4 lb pork sausage for bacon and 1/2 C chardonnay with ~1/4 C sour cream for the cream. And I was a little heavy with the Monterrey jack cheese (no Parmesan)... Aw shucks!

Apricot Lentil Soup

Reviewed: Oct. 23, 2013
Wildest, least prepared "wing-it" I've ever done... And it turned out good. Cranberries (no apricots), Italian chicken sausage cooked in (no cx stock), roma-sized spoonfuls of canned crushed tomatoes (you guessed it!) and oregano (no thyme). OH! And no lemon, but probably wouldn't have added it anyway. Now let's see how it tastes as leftovers!

Susan's Vinaigrette Coleslaw

Simple and by using honey (1 T), I was able to make it more paleo, less GMO. OH, after marinating and refrigeration, was tasty and crisp.

Made 1/3 of the recipe but at full seasoning (no sugar) and regular potato, not sweet. YUM!

Didn't make this, but I (as head chef) picked this out for a MASSIVE meal at my church to feed 50+. Seemed quite good and cooked up easy!

Carrot Souffle

Reviewed: Nov. 15, 2012
WOW! First souffle and it was a breeze. I made it SAVORY by NOT adding vanilla and sugar. Instead I steamed the carrots with 1/2 a leek, and 2 garlic cloves. When the cooked veggies were cool enough, I added everything (but the vanilla/sugar) AND 1 t black pepper and 1/2 C shredded Italian cheese into a food processor. When fully blended and smooth, into the oven it went. Cooked up nice and tasty! I'll definitely be making this one again!

Tasty, simple, quick to fix, and healthy... If you're fat-friendly. I didn't bother with the rolling. Just mixed it all together and chilled.

Eggplant Chips

Reviewed: Sep. 9, 2012
I altered this quite a bit and it turned out good, even when cold. Whether you eggplant chips are soft versus crisp is determined by your cutting skills! I used coconut oil, smearing both sides before placing on the cookie pan. I then sprinkled my spice mix and baked at 400 for ~12 min per side... Until golden. Watch or you'll have overdone chips! 2-4 T coconut oil 1/2 t salt 1/2 t pepper 1 t gran garlic 1 t parsley 1 t oregano Mix spices together and place in a shaker to get even distribution over eggplant. I only sprinkled one side, although I did turn them half way to ensure even baking.

Like another said... I followed the recipe and felt that there is insufficient information to recreate what the recipe implies. Sounded good, but didn't deliver.
