Banana Coconut Loaf

Excellent recipe. Nice change from standard banana nut. Did some slight changes with moist and flavorful results. Eliminated fat replacing with non-sweet applesauce; used 1/4 ts each of these flavorings: coconut, vanilla and banana; substituted cherries with 1/4 cup chopped dried cranberries; reduced sugar to 3/4 cup. As the author suggests, this recipe can easily be modified. Looking forward to making more using dried pineapple or mango for a tropical taste. A keeper.

Best of the Best Blueberry Muffins

The search is over as this recipe is the BEST. I have made many others, including "To Die For Blueberry Muffins" which were good, but lacked "something". The only change I made was reducing the sugar down 1/8 cup and using the topping from the "To Die for" muffins--because I had so much leftover from the recipe. Other than that, no change necessary. An extra bonus was using my not so sweet berries and having them taste delicious in this recipe! Thank you.

Fluffy French Toast

Excellent and tasty. I scaled recipe to 4 servings and used regular sliced bread (not thick); it covered 5 slices. I also added a pinch of nutmeg, although it is not necessary. Used spray on oil on a hot pan with picture perfect results.

Spicy Peach-Glazed Pork Chops

Very good recipe. A nice change from the basic pork recipes. I added a touch more chile paste and let the sauce reduce with the pork chops! I will try this recipe with chicken too.

Garlic Chicken

Easiest and flavorful "oven fried" chicken I ever made, especially since I didn't have to fry it first. I even tried coating the chicken in the oil and garlic mixture, then placed in the fridge in a covered bowl for several hours. When ready to use, just coated and baked! A keeper.

Gourmet Cream of Broccoli Soup

Excellent soup, very tasty and easy to make. I omitted the butter, cream and salt. Instead, sauteed in water and used plain soy milk. I did, however, add 1/4 to 1/2 cup of loosely grated sharp cheddar cheese. The flavor was still excellent with the modifications.

Mock Tuna Salad

Quick, easy and very tasty. I didn't have any spicy brown mustard, so I used 1 ts of dijon and 1 ts of yellow. This recipe seems to be great base for creating other recipes. This is a keeper.

Apple Cake I

Excellent bread--even pleased the very fussy eaters. Freezes well. However, I make some modifications. Reduced oil to 1/2 cup, added 1/2 cup unsweetened applesauce. Reduced sugar to 1-1/2 cups. Added 1/2 tsp nutmeg. I used granny smith apples, peeled and sliced, which added just a little tartness, but any cooking apple would be great this recipe. When cooled, sprinkle with powdered sugar.

Downeast Maine Pumpkin Bread

Best pumpkin bread I ever had! Full of flavor and moist. Freezes well. I did, however alter it slightly. Reduced oil to 1/2 cup, adding 1/2 cup applesauce; reduced suger to 2 cups, added 1/2 cup raisens; increased ginger to 1/2 ts and added 1 cup chopped nuts.
