Rhubarb Strawberry Crunch

I made this for my family and they raved about it. It was quick and easy as I usually have frozen rhubarb, the only thing I added was a tbsp. of tapioca,just because I like the texture that this gives to fruit deserts. I will definitely transfer this recipe to the kitchen recipe box. Thanks Michelle for sharing such a yummy desert.

Mild Cheesy Chicken Enchiladas

This was a great recipe. Quite a change from the usual hot and spicy that we associate with Mexican food. I, myself love the spicy tastes but my hubby has a 'tender' palate and he absolutely raved about this. The only thing I did different was to use a small amount of my homemade salsa in lieu of the fresh tomatoes. (I didn't feel like going to the grocers for 2 tomatoes). This recipe has made itself a permanent resident in my recipe box. Thanks Barbara.

Greek Pasta

I made this for dinner tonight, as a side dish with steak, and we found it very tasty. It might have been even better if I had remembered to add the oregano, but truthfully I didn't miss it. I only realized that it was missing when I came to do this review. I used Portabello mushrooms and since I was out of olive oil I used a bit of saflower oil and a bit of butter for the sauce. Thank you Mary for a lovely dish. Next time I will make sure I have all the right ingredients on hand and that I add them all. LOL..

Potato Spinach Casserole

I made this for dinner tonight and we found it very tasty. Since there are just the 2 of us now, I had to cut it down quite a bit. I used fresh spinach, which I chopped and blanched for 2 minutes in the microwave and I used fat free sour cream. The only thing I did wrong, I think, is that I used a bit too much sour cream and it was a bit more 'soupy' than I would have liked.(I didn't measure, my fault).I will make this again and use less. No matter--it was very good and a new way to serve spinach. PS. I asked my husband to rate it and he said that if I cut back on the sour cream it will be a five.

Hot Pepper Jelly

The taste is wonderful but my jelly wouldn't jell, I followed the instructions carefully but alas it's more like syrup than jelly. If anyone knows how to "fix" this I would appreciate it as I have 6 more pints of it and I hesitate to throw it out. I will check here weekly. Thanks

Classic Bran Muffins

I made two batches, one with raisins and one with dates. They were both a hit with my family. I made some in my mini muffin tins, but I put too much batter in the tins and they looked funny but were still delicious.

Black Chocolate Cake

I made this cake for my husband's birthday. He's a genuine dyed in the wool 'chocoholic'. I iced it with a chocolated fudge icing, and it was delicious. It turned out moist and even the day after the party, (there was a very little piece left) it stayed moist. This is definitely a keeper that I won't be reserving just for birthdays. Thanks Jeanie

Butter Tart Muffins

These muffins are delicious. What a nice change from the run of the day muffins. I made them in my mini muffin pans and they turned out great, they went in a flash so now I'm being asked when I'm going to make more. Thanks Helena.

Gingerbread Men

What a lovely cookie. The only gingerbread men I've ever had were always rock hard and hard to roll. Not these, they are a breeze to make. Who would have thought it? Butterscotch pudding. I experimented with coconut pudding and 1/2 cup of coconut and those were great also. I'm going to try chocolate next with chocolate chips. Thanks Kim

Dad's Oatmeal Cookies

These are absolutely fantastic! I can't keep the cookie jar full, they're eaten before I have a chance to wash the cookie sheet. I thought at first that there might be too much spice but I made them as the recipe said and we just love them. Don't change a thing. Thanks kedend

I made these for supper tonight as we were having Chili. I changed the sugar for 1 tbsp cornmeal. I asked my husband how he liked them,and asked if he had to rate them from one to five stars what would he give them? He said a 6, with his mouth full. This is deffinately going into my favourites.

Cherry Poppyseed Twinks

Nice tasty cookie. Next time I will make them a bit smaller, I was surprized to see how big they got, but Yum! I will be making another batch tomorrow. I love the poppy seeds and they look very nice along side the other Christmas cookies on a tray. Thanks for sharing Nancy.

Gingerbread

I don't like to give any recipe a bad review, but since I myself rely on the comments of others I feel I have no choice. I made this exactly as the recipe said, and I used a cookie stamp that I have on 1" balls. The cookies are tasteless, heavy and not sweet enough, nor is there enough spice to give credit to the name. They have hardened, and won't even soften with 'dunkin' in tea or coffee. Will definetely never make these again. Sorry Maura, this one just didn't cut it for me.

Apricot Cream Cheese Thumbprints

Lovely cookie, it is light and very tasty. It really did make a nice addition to the platter. I rolled some of them in coconut. I doubled the recipe and used an assortment of fillings. The cookies looked like jewels on my trays. Thanks for sharing Mellan.

Raisin Sour Cream Bars

Wow! What more can I say? I loved this and my family raved about it. It's not too sweet and the 'crumble' was just right. I'm going to try this using a date filling in the next one. Refrigerate it before cutting and you will get nice clean squares. I have added this to my 'Mom's Recipe Book' and it will be passed on to my daughters and daughter in law's. Thanks for sharing.

Candied Fruit Bread

Lovely loaf, I didn't have any currants left so I used golden raisins and added fresh grated nutmeg(just because I like it), and a tsp of vanilla. Will deffinately keep the recipe and make again through out the year.
