Rhubarb Strawberry Crunch
I made this for my family and they raved about it. It was quick and easy as I usually have frozen rhubarb, the only thing I added was a tbsp. of tapioca, just because I like the texture that this gives to fruit deserts. I will definitely transfer this recipe to the kitchen recipe box. Thanks Michelle for sharing such a yummy desert.

Mild Cheesy Chicken Enchiladas
This was a great recipe. Quite a change from the usual hot and spicy that we associate with Mexican food. I, myself love the spicy tastes but my hubby has a 'tender' palate and he absolutely raved about this. The only thing I did different was to use a small amount of my homemade salsa in lieu of the fresh tomatoes. (I didn't feel like going to the grocers for 2 tomatoes). This recipe has made itself a permanent resident in my recipe box. Thanks Barbara.

Greek Pasta
I made this for dinner tonight, as a side dish with steak, and we found it very tasty. It might have been even better if I had remembered to add the oregano, but truthfully I didn't miss it. I only realized that it was missing when I came to do this review. I used Portabello mushrooms and since I was out of olive oil I used a bit of saflower oil and a bit of butter for the sauce. Thank you Mary for a lovely dish. Next time I will make sure I have all the right ingredients on hand and that I add them all. LOL..
