Peppermint Meringues

My first time making meringue, and it was so easy! I added 1/4 tsp peppermint extract after the soft peak stage, and added a teaspoon more sugar to compensate. My peaks never fell, but I don't live in a humid climate (yay- one perk...). The peppermint flavour within the meringue is light and complements the crushed candy canes well. I baked at 225F for 1.5 hours as on the recipe, and only had to cool for an hour before it was dry on the inside.

Avocado Stuffed Yams

Love this! I love sweet potato and I love avocado, and I LOVE them together, it turns out! While the sweet potato is baking, chill the avocado mixture in the fridge. The juxtaposition of hot sweet potato vs. cold avocado, and their warm and sweet vs. tangy and sour flavors are out of this world!! Will definitely make this again!

Parsnip Chips

I followed Leeney's more healthy version (baked, not fried). They turned out great. The mix of spices (cayenne, chili powder, s&p) really gives it a nice kick without being too spicy.

Cauliflower With a Kick

Yum! I've never used parsnips in my cooking before but now I'm hooked! It gave such a nice complementary flavor and texture to the cauliflower. Tips for this recipe: 1) drain the cauliflower WELL as it will retain tons of water. At first I didn't feel the need to add milk because there was so much water. 2) use an electric beater or blender to mix. no way you will get as creamy of a texture by hand mashing. The nice smooth texture adds so much to the taste and look! With a blender I found I had to work in small quantities to begin with or else the blade kept getting stuck. Loved it, would definitely make again! My roommate who doesn't like mashed potatoes liked these which looked similar/were similar in consistency.

Big Soft Ginger Cookies

These cookies are fab. I like soft cookies better than the crunchy, dry ones. These ones have a great ginger cookie flavor, and actually STAY soft for 2 weeks in a sealed container! They were just as yummy the day I finished them from the day I first made them (I just made a ton, that's why it took me so long to finish em!).

Princess Cookies

These were so good that my fiance had no issues eating these cookies with such a girly name ;) I love lemon, so these little gorgeous cookies were such a treat. I agree with the reviews saying that you really need the lemon icing for that extra kick of lemon because the cookies on their own are a bit plain... but add the icing and WHOA!
