Golden Yam Brownies

I have been intrigued by this recipe since I came acrossed it a few days ago. I finally got out to get the yams in order to make it. I altered the recipe to make it a bit healthier, used apple sauce for the butter, halved the white sugar, and used 2 whole eggs and 2 egg whites. After I had already shredded a yam I realized I had drank the last of my milk so I couldn't make the glaze as noted. I did have a can of sweetened condensed milk (fat free) in the cupboard so I used a few table spoons of that to glaze it. I also liked the idea someone had of adding some cinnamon and ginger so I did. It smells and tastes a little like carrot cake. The end result is a little bit sticky but it is really quite tastey. Will definitely make it again. My end result, with the glaze, is about 110 calories per piece.

Slow Cooker Chicken Stroganoff

This is the first time I have ever made a recipe without making any real alterations. The only thing I did different was add an additional chicken breast because there were 5 in the package and an additional package of dressing mix. Because of my schedule today I had to let it cook for about 7 hours before mixing in the cream cheese and soup (couldn't get to it sooner than that) but it was still moist and absolutely delicious. I will definitely be making this again. I like easy and yummeh! Thanks!

Slow Cooker Enchiladas

I thought this was fairly awesome. I was a little worried because I was making it for the first time for a work function, and I do prefer to test out recipes before testing them on other humans. These went over well anyway. I did double the recipe and it was almost gone before I even got a chance to try it. I used cream of chicken and cream of celery as one of the girls in the office is allergic to mushrooms(and i don't particularly like CoM soup.) I used one jar of the Desert Pepper black bean and corn salsa (medium) and one can of mild enchilada sauce (store didn't have any medium that wasn't CRAZY salty.) i also used the mexican cheese. I added a can of black beans and I doubled up the tortillas as others mentioned previously. They weren't super spicy but weren't at all bland either. It is unusual for me to not add spices to something and just trust it won't taste like air... I went for it this time and am very happy I did. I will definitely make this again for myself. Oh and I don't eat beef so I did make this with ground turkey. Nobody knew. ;-)

Clone of a Cinnabon

I rated this one five stars even though they weren't perfect. The imperfections were totally due to my inexperience I am sure. The family loved them! The middle ones were a bit doughy so i think i would probably lower the cooking temp a bit and cook them longer next time. I went a little crazy with the middle stuffs but it was so yummy i am not at all sad about that. Thanks for hooking me up with my FIRST EVAH rolled out dough! ;-)

Fabulous Fruit Salad II

I thought this was awesome. i made mine with blackberries, raspberries, strawberries, apples, bananas, and walnuts. i would definitely make this again. i love the idea of granola in it too. The only thing i would do different is cutting up the fruit the day of the brunch and not the day before. the fruits did get a bit soft overnight and by the next night there was a good bit of liquid at the bottom of the bowl.

Breakfast Casserole II

I am only giving this four stars because, as written, I don't think I would have liked it much. My family might have but not me. I made it with 2 packages of sausage, hashbrowns with the peppers and onions added, some spices, and no mushrooms. I also used cream of chicken because i like it better than mushroom. i suppose it is a completely different recipe but the basic idea was great. I just need more kick to my food than this would have given. excellent base though! Thank you!

Best Chicken Pasta Salad

It dawned on me as I was throwing this together that it isn't that much different than the pasta salad I just started throwing together years ago. I used cherry tomatoes, cukes, onion, a little avocado (3 of the 4 i bought were bad...*sigh*) chicken, whole wheat rotini, and a lowfat homemade ranch...good stuff. i miss it with cauliflower though, i would have added it but I wasn't in the mood to pay $3 for a head of it. All in all...good stuff!

Mediterranean Pasta

I love this. To be honest it probably could have been artichokes and feta on a pile of dirt and I would have given it at least 3 stars but this was so much better. Because I can't just leave a recipe alone I tweaked it. I forgot to get rosemary at the store so I just messed with the spices. Fennel seed, hot pepper, and some italian seasoning. I am not a big fan of black olives so I skipped them. Used a turkey bacon and added some olive oil to the pan when it was done cooking (since there really isn't any fat from that bacon.) Also used some white wine with the mix to keep it nice and moist. added a great flavor. Also used whole wheat pasta. Coulda brought me to tears with its yumminess!

Ga Ga Clusters

This came out with what seems like a LOT of marshmallows, and my bag was smaller than the one in the recipe. It looks like they will mostly be chocolate covered marshmallows. That isn't necessarily a bad thing! ;>) I forgot to buy peanuts but I had a bag of walnuts wanting to be used so I used them and decided to give the milk chocolate/peanut butter swirl chips a try. If the fact that I wanted to shove my face in the bowl is any indication, I think the combo will be really good. I did use the fat free milk...whatever I can do to make myself feel better about these! :>)

Irish Cream Bundt Cake

I just made this for a Thanksgiving dry run. Wanted to make sure it tasted good and that the silicone bundt cake pan I was going to use would really work...thumbs up to both. I will be taking this to work tomorrow or I will eat the whole thing myself. When I do make it for Thanksgiving I will likely use less of the glaze and probably mix the pecans into the batter. Outstanding! ETA: I did substitute unsweetened applesauce for the oil. I almost always do. I have found that one of the lunch snack cups usually works perfect for half cup and i don't waste applesauce that way.

Slow Cooker Lasagna

I ended up throwing out the entire batch sadly. I like the premise but I did not like the flavor on this at all. I did add some heat to the sauce beacaus that's how I like it. It just didn't help. I also only cooked for two hours on low and found that that the noodles were already soft and bordering on mushy. Unfortunately, don't think I will be making this one again.

Quick and Easy Alfredo Sauce

The recipe in itself is not quite what i was looking for but it is a great start. I couldn't quite get enough garlic in it the first time to make me happy but i am certainly willing to try again. Just needs a bit more kick to make me happy. I will absolutely keep using it because it is so easy!

Cindy's Pumpkin Pie

I agree that this is a good one for people who do not like Pumpkin Pie as i am one of those people. i LOVED this recipe. I only wish i had read further in the reviews and would have probably doubled the recipe to make the two pies. This one came out kind of flat as two pies. Still very delicious. I did serve it with whipped topping as well. Going to buy pie shells tonight to make it again!

Chicken Enchilada Casserole I

i, too, am very bad in waiting so long to review this recipe. this was DELICIOUS!...i did doctor it a bit as well, i made it spicier and added a bit of corn and rice. also, took out the chicken broth. VERY GOOD. next time i will probably add some black beans as well. the only thing i can say is wrong with it, is that it makes toooooo much food for me!....lol, of course i am single and live alone so that is typical....do give it a try!

I LOVED this recipe so much that i bought more bananas just to let them ripen so i could make it again!...lol...the second time i made it though i left the choco-chips out...but i don't really like them so i probably should have left them out the first time...lol...enjoy!!!
