Golden Yam Brownies
I have been intrigued by this recipe since I came acrossed it a few days ago. I finally got out to get the yams in order to make it. I altered the recipe to make it a bit healthier, used apple sauce for the butter, halved the white sugar, and used 2 whole eggs and 2 egg whites. After I had already shredded a yam I realized I had drank the last of my milk so I couldn't make the glaze as noted. I did have a can of sweetened condensed milk (fat free) in the cupboard so I used a few table spoons of that to glaze it. I also liked the idea someone had of adding some cinnamon and ginger so I did. It smells and tastes a little like carrot cake. The end result is a little bit sticky but it is really quite tastey. Will definitely make it again. My end result, with the glaze, is about 110 calories per piece.

Slow Cooker Chicken Stroganoff
This is the first time I have ever made a recipe without making any real alterations. The only thing I did different was add an additional chicken breast because there were 5 in the package and an additional package of dressing mix. Because of my schedule today I had to let it cook for about 7 hours before mixing in the cream cheese and soup (couldn't get to it sooner than that) but it was still moist and absolutely delicious. I will definitely be making this again. I like easy and yummeh! Thanks!

Slow Cooker Enchiladas
I thought this was fairly awesome. I was a little worried because I was making it for the first time for a work function, and I do prefer to test out recipes before testing them on other humans. These went over well anyway. I did double the recipe and it was almost gone before I even got a chance to try it. I used cream of chicken and cream of celery as one of the girls in the office is allergic to mushrooms(and i don't particularly like CoM soup.) I used one jar of the Desert Pepper black bean and corn salsa (medium) and one can of mild enchilada sauce (store didn't have any medium that wasn't CRAZY salty.) i also used the mexican cheese. I added a can of black beans and I doubled up the tortillas as others mentioned previously. They weren't super spicy but weren't at all bland either. It is unusual for me to not add spices to something and just trust it won't taste like air... I went for it this time and am very happy I did. I will definitely make this again for myself. Oh and I don't eat beef so I did make this with ground turkey. Nobody knew. ;-)
