Tatertot Casserole

I have made this recipe 3x now and I found a way that I like it. First time, followed the recipe exactly with the exception of adding 4 eggs and baking the tater tots 10 minutes before adding them. The result was good but I knew this recipe could be even better. Second time, I wanted to increase the flavor profile so I added a layer of sauteed vegetables: diced onions, peppers, mushrooms and zucchini but goofed by using turkey sausage. What I learned is that this tastes best with more salt and fat. Thus, the third time I made this I used regular pork sausage, a variety of veges (listed above) and more cheese. I built it like a lasagna: first layer sausage, than a little cheese, sauteed veges, a little more cheese, the tater tots, a little more cheese and finally poured in the egg mixture. And yes, of course, topped with a little more cheese. I baked it for 45 minutes and it came out perfect. Sorry, don't know how much cheese I used but my family readily ate it.

Caramel-Macchiato Tiramisu Parfaits

I made this for our holiday dessert and everyone raved about it. I used a trifle bowl instead of making individual servings to allow everyone to eat as much as they wanted. And, though I used strong coffee (at least I thought so!) I should have made it stronger yet as the pound cake absorbs a lot of the coffee flavor thus making it fairly mild. I left out the chocolate as some family members are allergic to it. Recipe is sweet but I knew my family would be happy! As people left my house, I was asked when I was going to make it again so they could come over!

Fruity Curry Chicken Salad

Perfect recipe for the summer! We had a potluck birthday lunch at the office and many women wanted this recipe! The few modifications I made were to increase the quantity of the grapes, raisins and apples and not use as much mayo. It was VERY refreshing. Thanks for a great recipe!

Fruitcake

I was looking for a recipe that didn't have "candied" fruit and this recipe was fantastic! The entire family loved it and my daughter-in-law introduced it to her Swedish parents! They don't have fruitcake in Sweden but they absolutely raved about this recipe! Even though it took a lot of time to make and than follow-up with brandy, it was well worth watching people's faces, especially those who say they never like fruitcake until now. I will be making it a holiday tradition with my family!

Spanakopita II

We made this for Thanksgiving yesterday and it was wonderful! Took the advice of a previous reviewer and replaced the flour with 1/3 cup brown rice medley (from TJs), used garlic and herb feta along with basic feta cheese. This is a time consuming recipe and I needed my husband to help assemble (to keep the phyllo dough covered yet make it quick enough so it wouldn't dry out). How do people do this by themselves? Great, great recipe and a treat for my family.

Tiramisu Layer Cake

My family loves anything coffee flavored and this was no exception. I took other reader's advice and doubled the coffee but it was still a bit subtle. Next time I will add 3x the amount! Since it was presented as a holiday dessert, I served the cake with cut strawberries along the base...it was beautiful with the white frosting and chocolate dusting on top.

Candied Kielbasa

People liked this dish at last night's Halloween party. I followed other reviewer's advice and doubled the sauce. However, since I served it as a stand-alone appetizer(not over rice), I had too MUCH sauce. Sometimes, it's best to leave things just the way they were supposed to be.

Zucchini Boats on the Grill

This took a little more time than I had anticipated (company coming over for a barbecue and I had to make 10 boats) but it was well worth the results. I too cooked the zucchini longer (15 minutes) as other reviewers suggested but the zucchini became too soggy (be careful as one broke while pulling it out of the water). It was easy to scoop out but I chose not to use the "insides" but filled these with all the other ingredients. I received rave reviews from everyone and my husband asked me to make it again!!!

Cheddar Bacon Hamburgers

The other reviewers were correct...easy and delicious. We don't eat red meat very often but with out-of-town company coming over for a barbecue, I wanted to make something "kid" friendly but use different ingredients than the traditional "egg" and "breadcrumbs." These burgers were easy to prepare and received rave reviews.

Hot Bruschetta Dip

My grocery store was out of the round brie cheese so I used a wedge and didn't have any problems. Just be careful to watch the cheese in the microwave as I was busy chatting with my guests and I let it get too soft. Otherwise, everyone enjoyed it and I plan on serving it at my next gathering. Yum!

Italian Wedding Soup I

Okay, now I'm a believer too! Had an impromptu dinner party Saturday night and made this Friday evening. I also used Spinach but instead of all ground beef, I used 25% mild Italian sausage. My husband likes "crisper" meatballs so I pan fried all sides and they held their shape nicely in the soup. I was a little concerend about the "salt" issue because of earlier reviewers so I used "regular" canned chicken broth instead of "lower" sodium and the soup was wonderful.

Mushroom Lentil Barley Stew

This is an amazing soup! I made it two days before serving it for Christmas dinner (I had two vegans who came to dinner)and my guests were extremely impressed. My husband who likes hearty beef based soups was surprised at it's taste and called it "satisfying." Plus, my daughter-in-law who prides herself on her homemade soups stated it was the best soup she ever had. Need I say more? Thank you Carol.

Easy Stroganoff

We don't eat "red" meat often so I used ground chicken instead.Couple other modifications: I used fresh sliced mushrooms (added at the end to prevent them from getting "mushy"), used low fat sour cream and omitted all the milk and used about 6 oz of white wine instead. The wine made it taste more like the traditional beef stroganoff recipe I remember from my parents. This was tasty.

Chicken Cashew Salad

I was striving for a "healthy" recipe but settled on this one. With slight modifications, it was the hit of the office potluck! I don't think celery adds much in taste so I used zuchinni, used real mayo (ugh on Miracle Whip!), added red grapes and left out the green peppers (too many people don't like peppers). My husband and I ate the salad the day I made it and it was only okay. However, after sitting 24 hours, it was truly great. Even though it was sweet, I had no complaints.
