Fluffy Potato Casserole

GREAT recipe...I added cubed ham into the mix, and some cheddar cheese on top (before adding the french fried onions). Husband and kids loved it!

Holiday Chicken Salad

Delicious! Hubby even ate it, and he does not like Chicken Salad! Opted out of the celery, added more bell pepper, and left some chunks to make it crunchier!

Heavenly White Cake

Wow..wow..wow. This will be my permanent white cake recipe (I have a cake decorating business)!! I followed the directions exactly, but I folded the meringue in first and then beat it in. It was so moist and fluffy! The whole family loves it! I can't wait to hear what the customer says!!!

Groovy Green Smoothie

GREAT smoothie! I added about a tablespoon of honey and about a cup of ice. Just had a tonsillectomy, so trying new things and this one was a great variation from the same ole same ole bananas and milk!

Yam Smoothie

It was okay. I agree that it was a little bland tasting, and I added some cinnamon and when I make it again next time (with the leftover ingredients I already have), I'll add honey, more sugar, nutmeg, and maybe some ground cloves. The base is great, though, and I really like the texture!

Chai Tea Mix

Love it! Love it! Cardamom is really expensive, so I added nutmeg, and will try other variations next time. I'm definitely thinking of making this for all our friends at Christmas time! Makes a GREAT smoothie, too!

Bubble Tea

I love chai tea and i love tapioca pudding...and I'll try anything twice. The texture was just strange. Maybe if there was a way to flavor the tapioca pearls to make them sweeter?? It was just okay. LOVED the chai tea recipe, though, and even made this again, just without the tapioca pearls.

Fluffy Banana Cake

I agree with GodivaGirl on this one...it was very dense and not fluffy at all. I did double the recipe, and maybe could have used even more buttermilk than the recipe called for to make it more fluffy, but I was really hoping for a light, banana flavor. Maybe next time just a white cake with banana flavoring will be what I was hoping for.

Peanut Butter Bars I

These were a hit! I brought them to a gathering and they were begging me to give them the recipe! The peanut butter part was a little grainy, because of the graham cracker crumbs. This recipe was SO EASY, too! Definitely a keeper!

Fried Rice I

Excellent!! I would not recommend skipping the green onion. I only had one, and the few bites with the onion in it made it so much better! This recipe was a hit with the family! I even got the kids (and hubby) to eat peas! I also added chicken seasoned with ginger and soy sauce. Thank you for this recipe!

Easy Valentine Sandwich Cookies

This was a GREAT recipe!!! I used it to make Easter cookies (just different shapes than hearts). I also found the dough to be a little tough to work with, but took others' advice and worked flour into it when I rolled it out, then used powdered sugar with the second batch. I also used a powdered sugar/lime juice/milk glaze and sprinkled colored sugar crystals on top! I would have posted a picture but the cookies disappeared too fast!! Thanks for this recipe!

Black Bean and Corn Salad I

Very good. I tried marinating it for just a couple of hours and hubby hated it. He tried it again two days later and LOVED it! Marinating over night (at least) is the secret to this recipe!

Fruit Pizza II

This was excellent! I did not have to make modifications as far as ingredients go, but I did learn a few things: I used a springform pan to bake this....I would suggest halving the recipe if you are going to do this. I had way too much fruit and cool whip mixture leftover (which made for a really good fruit salad!). With the springform, there was way too much cookie crust which almost over powered the fruit. Overall, this was wonderful! I would up the prep time, though! It took close to an hour to prepare! GREAT recipe, thanks!

Jalapeno Mango Salsa with Vanilla and Lime

This was amazing! I didn't have green onions but we didn't really miss them. I also added a few teaspoons of cilantro. It is spicy and sweet...very good!

Roasted Easter Ham

Easy and delicious. I had to improvise: The store was out of bone-in ham, so I used a pre-cooked, 2lb ham. I didn't have maple syrup so I substituted with honey. My husband raved!
