My Polish husband loved it...even wants me to give the recipe to his mother! Made a few modifications to improve it. Cut the potatoes into small cubes, about 1/2". I added about a cup of sour cream to the soup mixture. Also used one clove of fresh garlic rather than garlic salt or powder. Topped with lots of grated cheese. This was awesome!

I make this every year at Christmas time. It's my families all time favourite! The only thing I change is that I sprinkle the icing sugar over the cookies from a sifter rather than rolling them in it. I found the sugar got too chunky that way.

Didn't like it the first time I made it but with a few changes it was transformed into a dish worthy of a four star rating. Reduce the onion by at least half. Saute onion and celery just until tender before adding to cucumber and feta. Add a few greek olives to jazz it up. Cut preparation time way down by cooking rice in microwave. Has a great feta taste which was hidden by all the raw onion in original recipe. I served this with "Grecian Pork Tenderloin" for a lovely Greek-style meal.

Good recipe with a few modifications. Makes way too much marinade - cut it in half and there is still more than enough for two whole tenderloins. I used lemon juice and reduced the amount of oregano. Also added fresh ground pepper to the marinade. Roasted uncovered in a 350 degree oven for about 40 minutes. Use an oven thermometer to get it perfect. If it's overcooked it dries right out.
